You can cook it in the oven and still crispy and not hard. You just have to boil the belly and leave it in the fridge overnight. But cooking in charcoal is still the best.

If you cook it in the oven. Cover it for atleast 2 hours to soften the skin then remove the cover. It shouldn't be that hard. If it's not brown enough set it on broil..

They're in Leavenworth Washington. It's a Bavarian Village in the cascades mountain about 2 hours east of Seattle. Kinda similar to Solvang, where in Solvang its a Dutch village, where here it is a German village. Very nice for a getaway.
