If I were you. I would cut that storage box in half and use for the smoking wood only. Just behind the storage box build a " Chuck Box ". Definitely would fit the Texas theme.
Love your videos guys, if you haven't already done it run your roof bracing from front of trailer to rear of trailer then you can put screws between every rib on your roof just like on your edges. Keep up the great work guys.
I myself just acquired a offset smoker (small one) and rebuilt it with liners and tuner plates, and dual thermometers...... was tickled to get some pointers from some Texas Natives and I sure am glad. When adding water to your moisture pan (where ever/whatever system you use) add HOT water...as it will not affect your cook temp. I would have never thought of it...but I think it helps. I cooked a small corned beef point last week...and the outside temp was below 20 degrees f. and it cooked even and moist. Good videos. Am enjoying them. Good Luck.

Most people around texas just put several gallons of water in the bottom of the smoker and when they are finished they just empty thru the valve. It also helps to clean the grease. One of my teachers did this for years with no harm to the smoker
Ok, never heard of that but might try it and see. Interesting concept.
If someone hasn't mentioned yet, don't forget between your storage behind the hot cooker should get some insulation or you might melt something inside the new storage. Hope this is a helpful comment.
On the front of the roof facing the vehicle you could use angled flashing to help the air flow over the roof and not catch air under the roof sheets.

Trout Run Thanks! Yeah, we really fed up with running around with a smoking hot brisket trying to find some place to set it down to wrap. Adding a work surface right underneath the doors would have been the logical thing to do the first time around, but well... better late than never.
Kudos to you for making these changes. Most would just live with the issues you identified and end up fighting their own discouragement each day. However, a proper and efficient work flow is just as critical to the end product as good equipment and quality ingredients. I can’t wait to see the other upgrades you have planned and wish you and your partners great success!

Use a propane or butane gas torch man or bolt on one of those burner like the gas grills have just to get your wood going then shut it off when it gets to cooking temp and just maintain with wood fire that's how I got my smoker set up makes it super easy to get going
Yeah, we've seen quite a few people do it that way. Just have been reluctant to mess with propane. One more thing to be mindful of...
Should have bought a couple of RV retractable awnings. A couple of telescoping mounting arms would allow the awning assembly to be lowered and secured for highway transport. Then when you reach the venue site, just raise and extend and poof, instant waterproof shelter.

Enjoying the videos! I would not recommend that you weld the water pan in place, especially if it's below the meat and subject to dripping juices. They get nasty quickly, and you'll want the option to remove for cleaning. Of course, you could put an aluminum pan on top of your metal pan, and replace periodically.
We know where you're coming from. Grease in your water pan does get very nasty. Thats why we simply welded the pan to the last bar on our grate, with the other end sitting on the top corner of the firebox. Sits nice and snuck, but can be taken out with that last bar.

A good way to keep your pit moist is to place a flat coiled 1/4 copper tube in your fire box and have it terminate in your smoke chamber with a water source set above the coil and a valve in between so you can control the flow until it generates steam. This will be a bit more labor intensive since you have a round fire box but it works well.

That’s a great idea Justin! Overregulated country that this is playing music in a commercial setting you usually have to pay fees to a central copyright holders collection agency (GEMA). But I’ll look into that again.

Some people use an LPG (propane) 'weed burner' to pre-heat the cooking chamber. Also comes in handy to get your fire burning well.

Remove the roofing material, and small square tubing, and use a 3x3 in. Thick wall square tubing for the 4 upright posts and you can use the smaller square tube for the rafters and 14guage (5/64 in.) plate and weld it on and forget the screws

Looking very good guys I'm working on getting the materials together to build a roof on my smoker that is on a 16 foot car trailer. There was alot of good advice in this video thanks for sharing and hope everything turns out good.

You might consider adding one of those wind deflectors on the back of your van roof... this will deflect most if not all of the wind up and over the top of your pit as you are driving down the motorway. it will also improve fuel economy for the van. Most HGV s have them fitted to the tractor unit roof as the trailer roof is generally higher... same principle :)
you need to put damper into the fire box door that can be open and closed for air flow in the fire box and it will draf into the smoker ...
G'day from DownUnder, while you are building the trailer every time you ad something to it see if you can just lift it from the handle on the ball joint this is the way I have loaded our caravan when going on a trip. It should put some load on the back axle with a heavy trailer like your I would make it so two people could barely lift it but you must lift it so you can judge how much weight is on the back its the load on the back that makes it sway and too much on the front of the trailer will lift the front wheel of the ground having at times no steering. Love what you are doing and would love some of the Texas taste. Another idea I have done was put Pump up shockers on the back of the van. Go to the Op shop and get some shiny forks to eat with the customer will bring it back clean with compliments. also, put the paper plate on a china plate. There has to be a better colour than black!! but I got no idea.
Thanks for your comment Greg! They're some good suggestion here. I think this time where actually going to measure the weight on the drawbar with a scale. The hitch on the Sprinter is rated to 150kg of direct downward load, and were thinking on measuring that to an approximate but close number with a scale once we have loaded the trailer the way its going to be loaded in the future.

If you would have welded a bigger tube to the uprights you could have lowered the roof for transport and raised it on site giving you more headroom while working and the streamline while traveling. it also would have eliminated the need for changing the counterweights. I think by lowering the roof you have made it a hotter work area. Don't get me wrong. what you have done is impressive. Congratulations. What events do you go to? I travel to Germany frequently for work. I'd love to get some of your brisket.

For safely towing and increased storage may I recommend using a pickup truck to haul to and from events? Truck bed tool boxes offer equal, if not more, storage compared to the van as well as much increased towing safety and ease. Love the work! Very interesting videos, greeting from Mississippi
Brandon Stowell Thanks for your comment Brandon. You certainly have a point. Pickup trucks are very rare and therefore kind of expensive here. That’s why we went with the Sprinter. Maybe we should look into buying an F250 or 2500 Ram in the states and shipping it.

Don’t mount that pan for water. Weld a plate barrier in and you can run water direct into the smoker. Then you can drain at the end of your cook. And glad to see you are planning to change the ball drop drain straight down.

I don't know if you've thought of this, but a rain gutter system on the roof of your serving side might be a good idea. That would, at least, help divert drips of rain falling on your customers as they order. Could be something to think about.

Firewood selection is key to great tasting bbq. What type of trees are available in Germany? You can order mesquite or oak, or hickory lump charcoal on Amazon
what about using a 1" black strapping on the top of roof with a water pruf gasket under it to stop the flexing...
For air get a manual coal forge blower.

You guys should visit New Braunfels, Tx during Wurstfest. Its German party Octoberfest meets Texas Style.
We did visit New Braunsfeld and had some great BBQ there, albeit not during Wurstfest.
Look on Ebay for ideas but they make all types of weld on set up take you can and to the firebox you having the same problem I had at first if you add your air intake on the sides of the firebox at least 6x20 on a box that size you will get a better draft pull and you will be amazed how much faster it will start coming and leaving it all the way open you can't loose you will come up to temperature in less than 15 minutes from fire up

Display pictures of the food on your trailer. People like to see nice pictures of the items on the menu, they will buy if it looks delicious.
Food photography is tough IMO. Definitely don't want it to look like a chinese takeout menu. Think we're going to hire a professional to shoot some pictures next season.
Ps put a drain on the pan so no more buckets and you can drain it after every event just lower the noise of the rig when you are cleaning it
for the water pn how about making a float in it so it can fill itself...
Watching your videos mate good work, however you dont want all the weight on your towball it is also damgerous, depending on your towpack maximum weight that should be on a towball is like 250kg. You can also possible adjust your axles to distribute weight better, you can also buy a measuring device which measure weight on a towball but with tandem trailers you want even distribution.
Thanks for your comment. I believe the towing setup on our van is rated to take up to 180kg of direct weight and were using a scale to make sure the trailer does not exceed that. We wouldn't want to start moving axles which would get us in trouble at the next trailer safety inspection. We just the load (water jugs, wood etc.) that is freely movable around until we get the desired distribution.
That fat that you drain would make the world's best gravy! That's a money maker on it's own ...

Check out a channel called "HowToBBQRight". The guy there shares so many great recipes and tutorials for how to do Texan BBQ. I would suggest the one where he shows how to make some perfect ribs. Keep up the great work👍🏾

If you are going to run the water through a pipe make sure you give it a fall in it so it can drain back to the water tank so you do have stale sat in the pipe and how are you going to know when enough water is in the tray . I think a jug is better

How much have you guys invested in this project? Looking great, I live in TX, far as your water pan you can weld in a little under the grate level so no meat space is taken up. The thermometers will read differently because of were the heat is at grate level is best. And digital I like.
We love the analog ones. Cook mostly by feel these days anyway and the analog ones just look kinda cool imo.
Including the refit and the trailer itself I would think were about 12k $ in.
Run a water pipe inside the pit, no more water heater.
Curious, why you didn’t make it reverse flow? And I would have a vent in the fire box door to help control heat, but nice work.

Bitte versuch in späteren Modifikationen zu vermeiden tragende Rohre irgendwo anders als an den Enden zu kürzen, auch wenn es mehr Arbeit ist. Selbst für einen erfahrenen Schweißer mit Schein kann das eine böse Überraschung geben wenn die Penetration in der Naht nicht durchgehend war oder sich Schlackeablagerungen/Hohlräume gebildet haben. Ich hab das früher auch gemacht, um zB die hohen Lieferkosten für +2m Länge zu sparren, wars wirklich nicht wert als dann ein tragendes Rohr genau an der Stelle gerissen ist. Ich drück die Daumen dass euch das nicht passiert!

You could have welded in door stops instead of changing the counter-weights..
use Led lights they use very little power and are super bright

I would do a stainless steel spigot, you don’t want any kind of rubber in that heat for that amount of time with your food,
If you can weld a spigot on the inside and connect the hose from the outside. Consumption safe hose of course :) keep up the hard work brotha
Thats exactly what we were thinking on doing. Also thought it would make sense to be able to completely disconnect the hose for freeze-safe storage in winter.
Is it me or are the two "S's" upside down?
The way the font is designed the S should be totally equal on both sides, so as not to have an up or downside. The cutout clearly is not perfect so I get why you might be thinking that.
I built the same type of smoker myself on the water pan weld you on the far end of the pit about 15x15x8x and it will hold a hotter temperature about a 100 degrees hotter than by the firebox so rotate your meat equals a faster cook in half of the time I can't keep a brisket on my smoker no longer than 4 1/2 hours or it will fall apart like pulled pork If you try it you will see what I'm saying the water when it hot makes the pit hotter temperature and fall off the bone meat if that's what the customer wants my wife is a chief and we do all types of events and It's nothing that touched my pit that wasn't perfect in half of the time if you try this I promise you want be sorry

ColKorn1965 Don’t know about your relatives, but I’m convinced nobody’s perfect. What is a German characteristic though I would say it trying to constantly improve efficiency and effectiveness, especially when it comes to technology.

Wenn ich das vom ersten Video richtig verstanden habe, dann ist das für den deutschen Markt.....und da spricht man die deutsche Sprache. Wenn man schon meint, man muß die Landsleute mit einer anderen Sprache mißhandeln, dann sollte man nicht so viele Fehler im Englischen machen. Wenn das aber ein Irrtum war und diese Geschichte für den amerikanischen Raum sein sollte, dann laßt doch Deutschland einfach weg. Naja, ich hoffe, man kann von Nordrhein-Vandalen doch zumindest den Durchschnitt erwarten, oder nicht?
Tut mir Leid, dass das dein einziger Eindruck war. Diese Videos richten sich an alle BBQ-Liebhaber, also auch solche die kein Deutsch sprechen.
