    lived in Texas for 30 years in Laredo...San Antonino...and Austin in a small town called round rock...and grew up with BBQ PITS...THIS IS TEXAS STYLE....SMOKE E'M BOY'S....GO LONG HORNS...

    Beast of a build. That brisket was lookin pretty good. As a smoker you will always be your worst critic, which is a sign of a true smoke master.

    I've been wanting to build a smoker for a while but you've got me feeling extra inspired. Great job, and great story telling this whole series of videos is awesome!

    You can fix the panels flapping by welding in a cross support pattern. A single piece of square tube, or a plus + sign, or x pattern. Screwing the panels to more points will make them rattle less. And if they are moving that much they will loosen the screws eventually so it really needs more supports for safety. Great looking trailer smoker!

    Greetings from South Texas! I would say run another bracing bar under and across for the roof. Then screw it down.

    Hey Lars ..... CONGRATS ! Excellent job (for a "rookie" --- haha) ! Now you've been "bitten" by the "Bar B Q "bug" ..... SAAALUTE ! Now, for the "flapping roof panels" ........ referencing "length wise" (from front to back of the trailer roof), take small / light gauge square tubing (at least 2 additional lengths for the front half and 2 more for the back half of the roof area) and weld them lengthwise to the existing 3 roof "rafters" (the front, the middle, and the back cross-member/rafters) that you have your roof panels screwed down to now! I'm guessing the width of the roof to be approximately 6 to 7 feet so that would give you TWO additional "anchor point/cross members" 24 inches apart to screw the roof panels down to instead of just having it screwed to the 3 existing 'roof frame/cross members". That ought to cure the "flapping in the wind" problem and wouldn't add that much more weight to it at all. Plus, it would improve rigidity of the entire roof "panel". GOOD luck and remember, when smoking TEXAS STYLE, you want to adhere to "LOW and SLOW" ..... low temps (around 200 deg F) and minimum 6 to 10 hours depending on the thickness of the meat and how many briskets you're smoking ! You might also experiment with the "3,2,1" method ....... start your cook at your desired temp with the meat "nekkid" (but seasoned like you like), for the first 3 hours, THEN wrap in aluminum foil for the next 2 hours, and the final hour in the smoker "nekkid" ! If you like cooking even slower you can do 4,3,2 at a lower temp ..... say around 180 deg F. GOOD LUCK !!!     Awesome job guys! Great build, look forward to seeing more. I grew up in Würzberg and have made Texas my home every since I came back to the states. BBQ is one thing that I always missed over there and now I miss German food all the time!

    For the roof i would suggest placing cross bars from corner to corner and attach the roofplates to them using the same screws you fixed the roof plates on. This will improve stability and you will have more points fixed to the frame so the plates will be more sturdy. Hope this will help.

    I live in Houston Texas and built my own smoker from a 125 gallon LPG tank. Took me 6 months to make it so I know it is a lot of work... Good job on your smoker fella!

    Fantastisch! Ich bin in Austin geboren und aufgewachsen und mag gern Franklin BBQ so oft wie möglich essen (fressen!). Bald baue ich auch ein BBQ smoker, aber vielleicht nicht so wie deins. Gut gemacht, grüsse aus Austin!
