Truthfully, most of these examples could easily be built with WordPress. It's often a lot faster to build a custom plugin or to add custom functionality to the theme than to code an entire e-commerce site from scratch.
I was resistant to this for years and I've finally realized that I should work smarter not harder. You mentioned that you could hand-code a site faster than using wordpress and I can only assume that you have a rock solid boilerplate that you start from.

My story is similar to you for small ecommerce projects I use wordpress and for large I use hand-coding
but keep in mind to customize things in wordpress you will require Intermediate level of html , css, Js, php to get how specificty works and how to customize add_to_cart button for specific page.

Accessibility and security are the two more important reasons and both approaches come with issues. Hardcoding your own website depends 100% on you to learn how to avoid or, at least, mitigate problems with those, but 3rd parties, we never really know what's going on behind the scenes and we have little to no control over.

The hassle of always patching WP for a site that no-one should care about but me and a few blog readers, is too much hassle moving forward.

That's so true! Like what if you've gone too far in your WordPress creation that, for whatever reason, you want it in the usual HTML/CSS format and use a backend tech of your choice or whatever.
I think that's the kind of freedom hand coding gets you. But that doesn't mean it's a time saver. Hand coding stuff out from scratch does take a shed load of time.
And this is why we need to take the time at the very beginning to think about the whole infrastructure and the end goal. Can't be shooting in the dark.. 🔦
Question is, can we even extract the HTML and CSS after I've created a WordPress website? Because if we can, that would be awesome. I know that WEBFLOW does allow exporting HTML/CSS if you PAY that is.. That's a bummer.. 🤣
