Homemade Pasta With Seared Shrimp and Scallops in a Lemon, Garlic, Butter, White Wine Sauce

Homemade pasta is one of the most satisfying meals to cook! Today is a special edition episode of Simply Elegant Home Cooking as Eric will be collaborating with his good friend Paulie from Paulie's Food Channel as they prepare a delicious seafood pasta with homemade fettuccine noodles! Paulie will show you how simple it is to make homemade pasta noodles which requires only three ingredients. Once the fettuccine noodles are prepared, Eric demonstrates a simple method of searing shrimp and scallops and using the same pan to create a delicious lemon, garlic, white wine, and butter sauce for the pasta noodles!
When cooking fresh pasta, be sure to use the highest quality eggs and flour. Since there are only three ingredients to the noodles, you want the quality of the ingredients to shine through. For the seafood, be sure to buy wild shrimp and wild, dry scallops. The dry scallops will sear up great in the pan and get a beautiful brown crust. And be sure not to over cook your seafood! Only 2-3 minutes per side for the scallops and 60 to 90 seconds per side for the shrimp. Any more and your seafood will be rubbery.
On the same topic, be sure not to over cook the pasta! Fresh pasta noodles cook in just a few minutes, a fraction of the time it takes for the boxed variety! After a quick cook in salted water, rinse but do not drain the pasta and finish it right in the sauce. Some of the starchy water will cling to the pasta and help to thicken up the sauce and cause the sauce to stick tot he pasta.
Ingredients for pasta noodles:
-4 egg yolk
-2 cups unbleached all purpose flour
-1/3 cup water
Ingredients for sauce:
-3/4 pound wild shrimp
-3/4 pound dry scallops
-3 tablespoons olive oil
1/2 lemon, juiced
-1/2 cup dry Italian white wine
-4 tablespoons butter
-3 gloves garlic
-1 large handful fresh Italian parsley
-1/4 teaspoon crushed red pepper flakes
-salt and pepper to taste - Jak na to + styl

Sort of made mine after this one. I added cream and a tad of corn starch to thicken my "sauce" up as well as some cherry tomatoes and squishing them to add to the sauce...but it was one of the best pastas I have ever made...ever. Thanks!

Thanks! The bagged frozen shrimp works great and I use it most of the time actually as the stuff in the case is almost always previously frozen anyway. I've never bought frozen scallops but I imagine it's the same for them as well. Just make sure though that you use what is called "dry scallops" which means that they have not been treated with chemical preservatives. Those chemicals extend their shelf life but destroy the ability to get a good sear on them!

You probably could use lime but I do think lemon is a better pairing with Italian seafood dishes. Any dry white wine will work.

How long ahead can you keep the seafood cooked in advance? Can you cook this in advance and then add the pasta later?
You could do it in advance you you wanted but shrimp and scallops cook really fast so you would probably be better off doing it together…the pasta making is where you spend all the time on this one.

That looks delicious!! Eric why do you use sliced garlic instead of minced. Is there a better flavor if the garlic is sliced? I'm a pretty good home cook but I have always minced. Also I don't use it very often but would like to start. I love it but the family isn't real keen on it.
I prefer sliced garlic but minced will definitely work too. I think I just prefer the texture of sliced.

Tried this. If you make it, do NOT add the lemon at the end. It completely killed it (tasted ok until that point). The resulting sauce was very runny and unbalanced :( This ruined the expensive seafood meal I had planned for my in-laws. Unfortunately, I cannot recommend.
Hmm that is interesting, it has never happened when I've made the recipe but I am sorry that it didn't work out for you.
I have the same thing happen to me with lemon. I use diced tomatoes for the acidity and it works great. Great recipe.
Great recipe but have to tell you before you decide to try your own food turn the mike off. Listening to people eat is HIGHLY annoying and it sounds like your swallowing a car.
