Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina spends her time cooking, gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera?
Her retired son-in-law films, her daughter helps her prep, and she usually has one or two grandkids in the kitchen.
Does Gina read the comments?

My mother really didn’t teach me how to cook while I was growing up. I’m learning everything by watching people cook on here and I get a warm feeling in my heart watching this! My grandmother passed away when I was only 6 years old. The few memories I have left of her was when she was cooking. It's always nice to watch these videos. Makes me feel young again, like the way things were.

Made my first homemade pasta last night, and I was shocked at just how easy it is. Dry pasta has its place, but fresh pasta takes it to a whole other level. This is great.
Her grandchildren and children are so so lucky to still have her around and her amazing recipes! I wish I hadn’t taken my grandmother and her incredible recipes for granted. She is an Italian woman as well and her whole world was cooking. She is still around, but sadly has fallen to dementia and cannot remember how to cook any longer. I miss her sweet happy face in the kitchen. This beautiful lady reminds me of her so much! 💞

There’s something so elegant and classic about Italian food. I’m Mexican so I didn’t really grow up with it, besides spaghetti and lasagna on rare occasions, but I’ve always loved Italian food whenever I’ve tried it in my adult life. I’ve even learned the 4 classic Roman pastas and that spread to making other dishes as well. Whenever I have kids, I will teach them what my abuelita taught me, but also all the Italian dishes that you and so many others have taught me through videos and articles. I have been in a "funk" for quite awhile..family far away and facing stage 3 ovarian cancer on my own. While stuck in my bed I happened on your fantastic videos. They gave me hope...something to look forward to.
I'm the youngest in a family of 5 kids...am 59 now. Mom always made her pasta with a rolling pin...that's how I was taught. Always hit and miss!!!

Fresh pasta takes hours to dry sometimes overnight if it is a high humidity day. Leave the pasta on your work surface or on tablecloth set over your table or even your bed. You can cook the fresh pasta within a few hours of making it or allow it to dry and store it in an airtight container in the fridge for a week or the freezer for a few weeks. I don't like to freeze it for more than a month.

Love listening and watching you Nona Gina. What a treat. Your videos take me right back to the 50's and 60's when my sisters and I used to watch and help and listen as my Sicilian grandmother and her cousins gathered to make huge batches of ravioli, and cannoli shells and cookies. They would laugh and talk and tell the greatest stories. My Nona had the big wooden work boards like you use. My favorite story was about one of those boards. One of the cousins talked about how her mother back in Sicily would make the pasta on the board and then afterwards when it was cooked they would put the cooked pasta in a pile on the cleaned board and the family would sit around the board and pull a section of the pasta over to themselves and eat right off of the huge board. Then when she came to America she would tell her children how they used to do that back in Italy. Her children loved the story and begged their mother to make pasta and let them eat it like that here. So the mother finally gave in. Well, this happened in the early 1900's and they were in San Jose CA which was a small town back then. So the story goes that the very day that the mother made the pasta and let her kids eat right off of the board their father just happened to bring the mayor home with him. The father was so embarrassed for the mayor to see his family eating like peasants from the old country that after the mayor left he became furious and picked up the board, pasta and all and threw it out into the yard. We all laughed so hard at that story. Your videos bring back so many memories. Thank you!

81? No wayyyyy. She looks like she is in her early 60s. Grandma, I love your channel, your recipes, and your charming personality. Grandma, how long do we leave the pasta out to dry and how do we store it for later use?
The pasta needs a few hours to dry , if it is a humid day it will take longer. Once it is dry I place the pasta in a plastic container with a tight fitting lid and store it in the fridge for a week or in the freezer for a month.

I lost my Italian Grandma back in 1988 as a teenager. I miss her and Gina reminds me so much of her. It's therapeutic to watch. I used to love watching my grandma make gnocchi. She would always talk about the "old country". She was born in Agordo, Italy. I would love to go there someday.

Well I made your recipe today and it came out beautifully. It was hard work. I'm in my sixties and Grandma Gina is 20 years my senior. I did not have the pasta machine and cut it by hand. It was amazing. Can't believe I made this fetticcini with my own hands. It was very tasty and very worthwhile. I even tried your tomato sauce and it was super delicious.
