2 lbs Idaho Potatoes (900g)
1 extra large Egg
1 cup All Purpose Unbleached Flour (128g)
¼ tsp Pepper (1.5g)
1 tsp Salt (6g)
1 cup grated Pecorino Romano Cheese (100g)
2-4 oz Bench Flour - as needed (60-120g)

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina spends her time cooking, gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera?
Her retired son-in-law films, her daughter helps her prep, and she usually has one or two grandkids in the kitchen.
Does Gina read the comments?

I've made gnocchi with my Nonna many times..This brings back many good memories of my Nonna.. It make me smile because my Nonna never measured it was always a little of this a little of that..As I got older I measured the ingredients so I would know..We always ate the gnocchi with burnt butter and cheese..💕
This is such an uplifting video; I wish more people could be like her. It seems that everyone is sort of going crazy nowadays, when really people just need to relax and eat some good Italian food.

My mother is 98. Both her parents came to America from Italy as teens. Her mother was from Sicily; her father, Rome.
Mom and I are watching this together. It is so heart- warming observing Mom watching Gina with such fascination. Her mother used to make this for a family of 10! Mom saw Gina and said, "oh! She even has the wooden board!" I took a quick picture. I wish I could share her expression with all of you!

Thank you for validating my pronunciation of gnocchi. I hear people pronounce it 'NO-CHEE" or "NO-KEE", but my Italian family has always pronounced it the way you do.

In this time when our elders are deemed by some to be inexplicably and criminally (imo) considered expendable, I cannot think of a better example of why such dark and fatalistic thinking should be utterly and totally rejected than this vibrant and loving woman. I adore how she adds the southern Italian 'ah' at the end of everything. I'm of Swedish & Irish descent, but have always loved Italian culture and cuisine, and Nonna Gina makes me feel like if I showed up at random she would be so very happy to make me a feast from scratch, just because that's her passion.

These videos are priceless to me! My grandparents passed before I was born so I had to pick up what I could from my aunt. My dad's family immigrated from Italy through Ellis Island and my dad was a 1st generation American and WW2 Veteran. I lost him in 2009 at the age of 87. I used to love cooking his favorite foods and you bringing all of these recipes to help me remember how to make a lot of things that I haven't made in years. Cherish the time you have with your family, you never know how long you have with them. 💜FAITH, HOPE & LOVE 💜🙏

I cannot begin to tell you how happy I am to find Gina on CZcams. My Italian mother (born in 1929 in Maddaloni, Italy) passed away in the beginning of January this year. She cooked EXACTLY like Gina!!! Watching Gina is bringing back the best memories watching my Mom cook. She used all the same recipes and techniques as Gina. When I was a boy, I would occasionally come home from school and notice a sheet on the bed full of gnocchi's that my mother made. I knew supper was going to be great. It was always a treat. I’ve stumbled upon Grandma Gina’s channel as a gnocchi researcher in search of the perfect gnocchi to impress a girl and I have never felt so supported in any journey before. Grandma Gina, I hope you know how far you reach.
Update; the girl has broken her ankle and goes into surgery first thing tomorrow morning. I will now be making the gnocchi and freezing it in a care package with other items deemed suitable for such a situation. My mother was from Cosenza, Italy and my father from Foggia, Italy. We made gnoochi when I was a young girl. We didn't use the fork or gnoochi board, just a thumbprint in the middle. That was my job. I love to cook and have so many fond memories growing up in an Italian family. I decided to try Gina's recipe yesterday and the added the cheese, which was a very good brand, did not add much to the flavor for me. I froze most of them since it is only me. I was in Roma in October 2019 and there was a restaurant where the chef was making gnoochi in an open window so you could watch. He used a gnoochi board then place them in a sieve that was in a bowl of flour and semolina mixture, cover them then shake off the access then place on a large board to prepare for cooking in the restaurant. Food is love and with shelter-in-place my outside deep freeze is packed since I take up my days cooking. Tomorrow is homemade fettuccine. Thank you Gina. your family is lucky to have you.
Thank you for the tip to cook the potatoes in their skins and peel after. I tried a recipe elsewhere and they did not recommend this and the dough took a lot more flour. Your method is much better.
Watching you was quite nostalgic. I'm of Armenian heritage, and I'm 63 this year. All of my family elders are passed. My grandmother was a wonderful cook--and our food memories are so evocative. Thank you for sharing your Italian recipes. My grandmother had no recipes, and if she had, they would have been written in Armenian. I think that I got my cooking talent from her and my mom (which everyone in my life appreciates!).
Making these videos makes the recipes and techniques accessible--in perpetuity. I've not made your recipe for homemade gnocchi, but made another. We don't eat that much gnocchi, but I wanted to try making it. It is easy and the end result is delicious. Nothing tastes better than homemade anything. The dish this was featured in was a one pot gnocchi with italian sausage, cream, spinach and garlie with mozzarella. Our family really enjoys it.

I call it that because it's not like these restaurants serve, $20.00 dish of spaghetti, I dont think so, give me what I call plain Italian home cooking.
