I absolutely love George’s work but if you want genuine Texas barbecue taste you can’t use that super sweet brown sauce, that’s Kansas City style barbecue sauce. Texas barbecue sauce is tomato based, it’s a lot redder, a bit thinner, and way more peppery.

2:16 You want to place the vent above the meat, as you want to pull the smoke over your meat. The way you have it most of the smoke will go out the vent.
@@darkwater234 Yeah you can use an external thermometer if you want. The grill temperature doesn't matter much as you want blue smoke over hitting the right temperature. A few degrees isn't going to matter too much.
I think part of it is he may be delivering lines to his daughter/camera operator since she's there as opposed to just the camera lens. He gets realtime reactions that way.

Today is my 21st Birthday and I cooked a burger off this show, I cooked the Juicy Lucy burger that you had cooked for Babish, here in South Africa we don't have american cheese so I had to make do with gouda, and let me tell you it was amazing, thank you George for all your awesome work and stay safe during these trying times :D
I was a flattop cook at steak n shake....I hate to give any kind of credit in that direction, but I learned that a flatgrill burger done right is he best burger I'll ever eat. I was also head broiler cook at a steakhouse for a few years, so I've got a fair amount of perspective. The trick is to almost make a dome with your party. Thick in the middle, gradually tapered out til you meet your cook surface. I've had great flame heated burgers, but they don't come close to a proper flatgrill/skillet burger.

it's shut. unless the flames die down, then he opens it up to direct air on the coals to heat up.
