But is it worth trying to fly a drone, and ride a bike at the same time? Or is this 360 camera a good middle ground?

I don't see much advantage in the 360 cam. I'd return it.
Do take into account that drone regulation is different across different countries in Europe. I think a small Mavic should be alright in most countries though and heck, the chances of getting caught would be fairly small anyway.
Very important, since in some countries you would need an authorisation to fly them when they are over a certain weight and we are talking grams, not kilograms.

you can connect the 360 camera to the mac using a usb-c to usb-c cable....like the one you use for charging it. it will not be super fast but the fastest way you have.

If you are coming back to Germany, you need to bike from Koblenz to Trier. The Dutch come down and swamp the Mosel on bikes every year. Plus, there is nothing but wine vineyards, perpetual beauty and free wine tasting all along the river. Touch base if you need any more tips. I am an American who has been in Germany since 1980. Never get tired of Europe. BTW, check with local law on using drones. There are some stiff penalties for using them the wrong way or in the wrong place.
Make sure you register and follow the the rules for drones in the different countries. And your drone will need need most likely insurance and be registered

An option with a drone is one that automatically follows you. Some of them are pretty good at that. Though I am sure there is still some hassle to it.
