清湯牛腩 | Beef Brisket in Clear Broth | 湯清味濃

材料:
- 450克 牛肋條
- 900克 白蘿蔔
- 2+4片 薑
- 1+1根 蔥
- 200克 中國芹菜
- 4粒 蒜頭
- 1個 紅蔥頭
- 2粒 八角
- 1小段 肉桂棒
- 3-4片 月桂葉
- 1粒 草果
- 2片 甘草
- 1湯匙 白胡椒粒
- 1湯匙 花椒
- 2+2湯匙 紹興酒
- 25克 冰糖
- 2湯匙 魚露
- 1茶匙 煮白蘿蔔用鹽
- 1升 熱水
(足以蓋過所有材料)
Ingredients:
- 450g Beef Ribs
- 900g White Radish
- 2+4 slices Ginger
- 1+1 stalks Green Onions
- 200g Chinese Celery
- 4 clove Garlic
- 1 Shallot
- 2 Star anise
- 1 Small cinnamon stick
- 3-4 Bay leaves
- 1 Tsaoko
- 2 Licorice root slices
- 1tbsp White peppercorns
- 1tbsp Sichuan Peppercorn
- 2+2 tbsp Shaoxing wine
- 25g Rock sugar
- 2 tbsp Fish sauce
- 1tsp Salt for parboiling white radish
- 1L Hot water
(enough to cover all the ingredients)
