    I use aquafaba instead of oil it comes out creamy without the oil, I do use tahini. I also make it with other beans like black beans or red kidney beans & like to add lots of fresh herbs like coriander/cilantro or basil & spices & steamed sweet potatoes or roasted veggies. So when I eat it I get both beans & veggies combined.

    I often add avocado (40% to 60% chickpeas), Lime instead of lemon, and fresh Coriander / Cilantro + chili flakes. YUM!

      False information is that it's of Palestine origin, it's not. It's Egyptian but you Palestine bullies won't stop until you target anyone who says the word Israel

      @@winnawinnavegandinna4727 hmmm have you ever been to Egypt? Hummus is not common in Egypt. There Fool Medammes (fava beans) is more common. I even tried to search in Arabic for an Egyptian hummus recipe an couldn't fine any. The only recipes on Egyptian websites referred to hummus as "hummus al sham" (hummus of the Levant) and the levant is (Palestine, Syria, Jordan and Lebanon).

      @@dfdgdg3333 actually yes, I have, multiple times, have you? You'll find the best in the Sinai peninsula. By the way the hummus ful mix is to die for! Highly recommended.

      @@dfdgdg3333 do you know the origin of the Palestinian people? You do know they're originally a nomadic race that travelled to this region from surrounding countries, Egypt, Jordan and Syria so you're technically half right.
      (A common Palestinian surname is Al Masri for example it translates to 'The Egyptian'). Just some history for you there.

      @@dfdgdg3333 oh and one more thing I just googled 'Egyptian humus' the first thing that came up is '14th century Egyptian Hummus' ....
      If you really wanna challenge me on this, I'll give you another history lesson...
      Palestine was the name given to Israel by the Romans in order to try to erase any Jewish connection to the area (Palestina) the letter P doesn't even exist in the Arab language. The area Nablus in the west bank is actually a Roman town called Napolis ... This is a food channel I will refrain from further political commentary. Bon appetit.

    Pro tip that'll definitely help you on your quest:
    Ice.
    I'm not kidding. Ice makes for a crazy smooth hummus.
    Slowly add the ice cubes, one by one, to the processor while it's still running. This will stop the hummus from heating while processing, the color will get lighter and the texture is going to be out of this world. I swear on it.

    Gents - to make it oil free try adding 2 ice cubes instead of 8 tbsp olive oil. I did this previously and it was very light and fluffy. Also, I just soaked the canned chickpeas in water with baking soda and the shells lifted off - no need to cook first.

    🧡💛Hummus 💛🧡 I love it with a pool of olive oil, red pepper flakes& chopped black olives sprinkled on top. Warm home made pita to used too dip.

      Israeli hummus is hummus made in Israel. Made by Arabs or Jews or anybody else. Good old chickpeas mashed with some tahini, lemon juice, garlic and additional spices. Syrian hummus made in Syria, Jordanian in Jordan. Palestinian hummus is basically the same but with added flavor of endless complaining how israelis stole palestinian hummus.

    Now I know what I'll be making for the weekend and I'm going to throw some pumpkin in there for the season. One flavor or addidtion I used to do was caramelized shallots. It gave that hint of sweetness and was so good. I'm just too lazy to do any of that now.

    Found your channel through Jamie Oliver’s. I have been more into healthy & vegan so prepping my own food more. Tried this and think it’s fantastic. The removal of the skin of the chickpeas is a bit of a hassle but worth it. Since I like lemony I added 2 preserved lemons and also 1/2 tsp of tumuric. New subscriber here

    Fantastic...thank you. Will give this method a try. I like making humous with roasted red peppers. Or peanut butter. Or adding lots of fresh herbs from the garden....chives parsley basil etc.

    I make my own hummus because I love chile and lime with some heat and thats a flavor I never see at the supermarket. I need to try making it with this method.👍 It looks so silky, fluffy and smooth!💯💞🌱

    Place a strip of kelp/wakame in the instantpot with the beans when I cook them along with a clove of garlic, a shallot & then puree the beans with the seaweed, garlic, shallot, for extra nutrition & taste.

    I like extra garlic, sumac, zaatar, and paprika. Garnish with Olives instead of oil. I also put fresh cilantro, mint, and green chili for a Indian chutney twist. Roasted red peppers and sundried tomatoes make a great variation options to the fundamental hummus.

    Great show. I add ice whilst blending I find this helps to make an extra light and creamy hummus.

    I just get a can soak it in like warm water and massage them with my hand. Skim the top rinse and repeat. The process takes about 5 minutes. I love the garlic lemon technique. I would save that garlic for tabouli. Make great lettuce wraps.

      Thorsten Böhme Olive oil virgin and cold pressed is one of the best oils you can have for your hormone health and longevity Go check out Stephen Gundry channel . He is a world heart expert and lives in one of the Blue zones. You will be surprises how much olive oil he consumes

    I use a high speed blender and thus I welcome the fiber of the skins~! With the right ratio of liquid to 'ingredients' I can get my Vitamix Blender up to the 10th speed to cream my Hummus. The Hummus is then the consistency of ice cream/sour cream/pudding,,, LOL, it is just that creamy. A few additional ideas: I cut my lemons into 'wheels' and freeze them (remove seeds). I then take a wheel or two and pop that into the blender as well,,, the Lemon skin (oils), rind (vitamins, min, enzymes) really add to the dish,,,, I find the lemon flavor much more broad than just only using the juice of the lemon. My last tip is to sprout 1/3rd of your chick peas. Easy to do; soak over night and then just rinse 2x a day for 3 days until a little "tail" grows. So nutritious~!!

      @@leahspilchen590 I could use fresh, but I freeze them just for ease of use. It's just easy to grab a wheel of Lemon or Orange out of the freezer and toss it in the blender. I make a nice lemon aide drink by adding ginger pepper flakes and turmeric ..

    I dont remove the husks, but it breaks down with baking soda none the less. What i do is that i boil it for longer in the alkaline water and the result is as smooth as it can get honestly.

    No No No!!!!! As a true real Israeli I can tell you that the Israeli one you called Israeli in your last video is most definitely an Israeli method!!!!! Whoever told you otherwise is anti Israel and prejudice !!!!!!!!! Another thing is the recipe should traditionally incorporate some of the chickpea cooking liquid and cumin!     Hey, my favorite spice combination in hummus is toasted sesameoil (just a little bit, the flavor is intense) and ground corianderseeds (pretty floral taste)

    I love hummus! It's something I eat daily. I'm definitely going to try this method. If you wanted a stronger garlic flavour, would you just add more cloves to the lemon juice when you make your infusion? I love a good garlicky hummus, roasted red pepper is also a favourite here. 😊

    For a slight different taste I love to add ground fennel or ground fenegriek to the hummus. I have to try removing the husk, the texture is awesome

    I will try out the baking soda cooking method but I can't say yes to that much oil, need a version that is equally fluffy but has no oil.

      Yup that's too much oil! 600 calories just from oil! But unfortunately oil is what gives hummus the nice creamy texture and a great taste too.

    From what I’ve researched, hommos was supposed to have originated in Egypt back to the 13th century using more cumin than used now. The Greeks also have their hummus. Good luck to my favorite adorable twins.

    The thing about hummus is that it's an arabian food, by that every country does it differently, so like the lebanese hummus is way different than the egyptian, the Palestinian is way different. It's a very diverse food as every arabian country does it differently

    I wonder if it could be made with cooked channa dal ie split peeled chickpeas. This would save removing the skin. I always use miso for salt, quite tasty too.

    I love as much Finer as possible , however I would Love to try this New One without the husks I would Definitely use those Husks in another product / products. , please do not put them into the Food Waste . My Goodness you could sell lt. for extra fiber for Wraps / stir Fry or add it to everything . Please do not dispose of them I love picking them off to eat. . I offer said to my Husband that we could Really live on the scraps that some people throw into the compost. For Instance The stem off of the Broccoli . Some people peel their Potato to almost. . Some dispose of the Green Leaves off of Cabbage. ,

    Hi, i don’t know how to make runny tahini w/ no oil. Would regular homemade tahini do? My family love the strong garlic flavor so i roast my garlic whole and use them in my hummus. So so good.

    I just found your channel and I'm excited to watch more of your videos !! I make a lot of hummus since I became vegan/vegetarian, meaning I try very hard to stay vegan but I make mistakes...lol Like tonight I didn't realize till I finished dinner that the gf pasta I made wasn't vegan. It will be a year in September since I became vegan/vegetarian. Anyway my families favorite hummus I make is with garlic, lime and a bunch of Cilantro!! Yumm...     Thank you for another fabulous video! Love humus and my absolute favourite is a smoked humus our grocery chain here does, not sure if it's liquid smoke/smoked paprika that achieves the smokiness? Quick question our major challenge is our eldest daughter is allergic to sesame seeds so no tahini for us. Could I try cashew butter and thin it down to a runny consistency with water or oil? Great to see how much you're enjoying the process of discovery and learning. Thanks again stay well

      Hi Coll! Glad you're enjoying the video series. You could try make a sunflower seed butter, the smokiness you're going for might mask any additional flavours. As olivia said below, walnuts might be a good option but it'll be an expensive hummus.

    Ok make the one you just made, in addition add cumin, (garlic, lemon and olive oil already in) finally top with za'atar. I think that's how you spell it, it's a middle eastern spice that will take it to the next level. When you try it let me know what you think. That's how I was taught to make it.

      Zaatar with olive oil and hummus is the best!! We have started to make our own, thanks to the internet we can find many traditional recipes from the home country. If I may add, I think their recipe needs more tahini, too many recipes just taste like chickpeas ground up, needs a perfect blend of tahini and chickpea to make a whole new flavour profile.

    At our local Trader Joes store they have an eggplant hummus that has no oil and it is delicious! Ingredients: Chickpeas, Eggplant, sesame tahini, Lemon Juice, Garlic, water, sea salt, pomegranate juice. Can you make that? Don't know how to cook the eggplant.

    As hummus is rather like a cheese dip in flavour profile, have you considered adding probiotics and/or moulds and aging it a bit? Perhaps tone down the salt and acid during, then add those as needed after the "cheese" is done. I'm thinking of trying this, as I have had mixed success with fermented/aged nut-based so far. My Last batch went rotten, but I also was making cultured vegan butter, and a happy "oops," it has mould. Definitely Penicillium; the smell is perfectly of a nice Roquefort or Stilton. Now I just need to boil me some chickpeas, and take chances.

    Perhaps experiment with different tahinis if you haven’t already, I myself have found unhulled or a mix of hulled and unhulled sesame seeds for the tahini to give it a very rich flavor that can be nice. For pre-bought tahini I tried to research back in the day the best one and Soom seems to be a winner.

      I like your style!! Fitting name too. We're always questioning the best flavours and ingredients too. We have a grinder in our shop for making nut butter we might have to see if its fine enough to make tahini. :D

    Lol appreciate the hummus videos but if you mention Israel/Palestine in a video you’re gonna get some angry folks. The food has its roots in both Israeli and Palestinian cuisine. Eat good healthy food and be happy folks!

      We like seeing people coming out to defend or correct things though. We can all grow and move forward as a ground. Coming from Ireland the middle east might as well have been on a different planet to us growing up so we enjoy finding out little regional traditions as well has more cultural qualities.
