Made the “badgies” for tea earlier. Absolutely delicious. Didn’t have any chutney or raita on hand, so put a few dabs of sri racha on, gorgeous! As a side note, I made half of the mix straight away, then made the rest after being in the fridge for 4 hours. The 2nd batch was even better. Thanks for the recipe guys ❤️

Cauliflower steaks - * please note all measurements for spices are a visual guess as they weren't saying how much was used :)
2 Cauliflower steaks cut one inch thick
Ground flaxseed (maybe 1/4 of a cup?)
Ground fennel - 2 Tsp, one for each steak
Zatar (?) (spice mix with oregano, marjoram, sesame seeds, sumac (sp ?)) - 1 Tsp
    season with salt to taste
extra virgin olive oil, rubbed all over to help crisp up
Bake in pre-heated oven on 200C for about 20-30 mins, until cooked through, soft and golden crispy on the outside. Could use crumbing that is left over on the tray as a makeshift dukkah or to sprinkle over the buffalo wings? Up to the individual but don't waste it!

You can microwave it. Cut some florets up and in a bowl with a tiny bit of water. Put a plate on top. Let it cook about two to three minutes depending on what power your microwave is. You can also stir fry cauliflower pieces in a wok on portable plug in stovetop rings with a little oil. You can buy these quite cheaply in Argos etc. Single or double ring.
