steel cut oats make great rice substitute - cook 1 part oats to 2 parts water. They are quite sticky so they will mould well. I may try buckwheat (but it is not quite as sticky).

Looks good, I like the tomato idea. I have recently been marinating dried mango and jackfruit for several days for my sushi, have to plan ahead but they soak up a lot more of the flavor.

Wow! Delicious! This is my second time trying it because I didn’t get the tomato sashimi right the first time. Wow! Amazing!! This time I used veganaise and sriracha to save time. Thank you!! Sooo good! I also mixed tamari and wasabi and put just a little inside.
