Italian Meatloaf Smoked On The Weber Kettle

- Meatloaf is fantastic. But sometimes it’s fun to change up the flavors in this classic dish a bit, which is what I do in this video, smoking it up on the Weber Kettle using Olive Wood, and finishing it off with a simple homemade marinara sauce.
Italian Meatloaf Ingredients
1 lb 80/20 Ground Beef
1 lb Ground Pork
1 cup Shredded Parmesan Cheese
½ cup Bread Crumbs
¼ cup Chopped Onion
1 egg
1 TBSP Dried Oregano
1 TBSP Dried Basil
1 tsp Ground Black Pepper
1 tsp Kosher Salt
1 tsp Granulated Garlic
Easy Marinara Sauce Ingredients
2 14 oz cans Peeled Crushed Tomatoes
1 TBSP Minced Garlic (saute in 2 tsp Olive Oil)
2 tsp Italian Seasoning
1 tsp Dried Oregano
½ tsp Kosher Salt

Meatloaf over hot coals is the only way we do them anymore. I love a good meat loaf. I don’t see them as a so-so meal to fill that empty place in the stomach.

Oh plenty. But most of the things I make on video I’ve made many times before so I pretty much have the cooks figured out before I start 😊

Ry - Like all your vids, this makes my mouth water! Suggestion if I might - when adding dry oregano to food, I place it in the palm of one hand and use the palm of the other to crush it. It's rather like toasting sesame seeds, it seems to bring out a better oregano flavor. Please keep up the good work - - I love the olive wood too! Paul

Ry, it must take restraint to make a modest-sized meatloaf. Mine usually wind up weighing five or six pounds. That one looked very tasty. I still haven't cooked one outside, but that needs to change.

Looks great! I tried something similar to this a few weeks ago, with provolone and spinach rolled into the meat! I wish I’d thought of putting sauce on the outside!

Three questions Ry: FIRST....some Italian chefs I know say the "secret" to marinara is to cook and then semi-puree some CARROTS to mix into the sauce when it cooks--gives a nice sweet brightness. What do you think? SECOND: My mom, who learned to cook in the 50s and 60's, always used, instead of bread crumbs, crushed cornflakes--Kellogg's used to even sell "corn flake crumbs" as a boxed product--because they gave a richness to meatloaf. Do you think that'd work in this? And lastly...where do you get the big chunk olive wood? Is there an online/mailorder source? Thanks again!
The people in Europe don’t have google? “ hey google what’s one tsp of sage weigh in grams?” That was tough. The problem is tsp is volume not weight is the only issue I see.
What an awesome idea. My wife does the Keto diet and avoids bread/gluten. I wonder if I could substitute almond meal or flour for bread crumbs. Hope I can try this!
Secret here: those were gluten free bread crumbs. My daughter has Celiac Disease so I usually substitute gluten free options when possible.

Regular meatloaf I serve mashed potatoes
The obvious one would be some kind of pasta with cheese and some of the marinara. My Dad likes to cut up zucchini and summer squash and bake it with marinara sauce and Italian cheeses. That might be a slightly healthier option.
