I'm that boring person who asked for meatloaf for my birthday!!!! My wife doesn't cook for me often since I'm the chef of the house, so when I can make her happy to cook for me, it's a win/win! That looks sooooo good. The only thing I wanted to add was some cheese....some gooey, melty cheese.
My mom, God rest her soul, made an AMAZING, not boring meatloaf. And the best thing in the world was a leftover meatloaf sandwich!
Consider just blasting all that veg in the food processor and cooking it all the way down as soffritto to turn the flavor up even higher. I like soffritto so much I've been planning on a little experiment, cooking it down super slow with some light smoke on it. I generally make batches big enough to freeze for a few soups or whatever, but I could easily see doing a truly massive batch over a fire and having enough for months.
Bread pan is where I always shape my meatloaf so it fits the bread I make with it perfectly.
