True comfort food! I never knew this was a true budget/struggle meal and how my mom fed 4 people with one half pound of burger and the end of a loaf of bread... we called the scrambled burger ones toasty burgers and substituted relish for worcesteshire sauce - so good & we never thought we were poor!!

For years I read "Patty Melt" on diner menus and thought "Pfft! I'll order a hamburger before I waste my time on that." Then I tried a patty melt and realized how very wrong I was. Thanks for sharing this recipe and thanks for the history lesson.
I've never tried one because I always thought the same thing. But now I'm definitely gonna try it, because now I actually have a better understanding of what it actually is.

@@JBleeZy6969 I have been making my own "smash burgers" recently, and now after learning how simple and great those are, it made me reconsider what patty melts are all about. Before the smash burgers, I didn't even really understand what it actually was, as I mentioned above. I used to make really crappy generic burgers and didn't quite understand what I was missing. But now with my new knowledge on the subject, I will definitely try it sooner or later! (both restaurant versions and homemade)

My version is made with Swiss cheese and rye bread. You fry seasoned hamburger patties on the griddle or in frying pan. With some of the grease from the hamburger still on the grill, throw on a piece of bread, top with cheese, caramelized onions, hamburger, caramelized onions, cheese, then another slice of bread. Fry on both sides until bread is brown and cheese is melted. It works great with sourdough, too.
Rye bread is how I’ve had them as well!
I always thought the defacto bread for a patty melt was rye.
Greasy meat, greasy cheese, grease gets soaked into the bread.........I'll take 3 please.

A patty melt was one of my standard orders at IHOP in the 70's. The old-school version had Swiss cheese and rye bread.

@The94GTC it works because mayo is just oil and egg. you can also use it to coat fried stuff as well, its even better than pure beaten eggs for deepfried.
These are a family recipe that I've been eating since I was a kid. We make them a bit different though. We use a hamburger patty topped with grilled onions. For the bread we use sourdough rye instead. We grill the rye like a grilled cheese, then open the face of the sandwich and put the burger with the grilled onions inside. Then close the sandwich and grill to desired crispness.
This is basically a Frisco Melt. They sell them at Steak N Shake.

Long time CA resident. Every patty melt I've ever had was two well done patties on rye with pickles,grilled onions, and cheese. Then grilled after assembly.
California. There are other versions in different states.
The original patty melt recipe called for red onions and swiss cheese, salt and pepper, two well done ground beef patties on rye. No pickles or the other stuff he added. He didn't do a legitimate version of the 1940s patty melt at all.
@GoldenState I've eaten hundreds of them in California and never once got one with swiss on it, odd. I take it you've only had them at the same few restaurants? I've literally had them at 50 or 60 different places and except for maybe 2 that used Cheddar they were always American cheese.
The only issue I have with them is not having the rye bread.
Yup. I've had abomination that claim to be patty melts (like sourdough and American cheese), but a proper patty melt is rye and Swiss. Not saying the others aren't delicious, but they're not patty melts.
As a Cali girl I grew up on these, we ate them on sourdough. My mom always toasted the sandwich in the burger grease with a smidge of butter. This is still one of my favorites to make for my family!

I always make my pattie melts with swiss cheese and I add fresh caramelized baby bella mushrooms.
So I guess you can call it a mushroom onion 'n swiss pattie melt.

@@danielhall6578 If you caramelize your onions - which you almost always should... Get them translucent and turning a real caramel color, and then toss in your diced jalapenos and cook till they're tender and browning. That way you're not biting into crunchy hard bits of raw chile. Texture is the conductor of flavor.
Always remember that onions must be cooked first before you add any other vegetable. The water in the onion has to be cooked out before it will caramelize. Sprinkle salt on the onions to help draw the water out more quickly.
Adding vegetables before onions caramelize just adds water, which you're trying to eliminate from the onions to caramelize. They won't caramelize unless you do it right.
And when you really want to make cooking easier. Start chopping and preparing your ingredients first, and have them in their own little bowls. It's called mise en place. Which is French for everything's in their place and ready.
This will help you keep from screwing things up or burning something while your chopping something else.
I’ve made Patty Melts for over 36 years at my Diner. I hear all this all the time. “Love your Patty Melts!” Course it’s on a huge indoor flattop. I Use Swiss or American on the sliced bread up to guests. It comes on Seeded Rye for Swiss and Country White with American. Carmelized onions are Major. When a guests says no onions, and no sauce, I tell them it’s not a Patty Melt. haha
On rye with swiss is my favorite , and it's GOT to have carmelized onions . I prefer it with thin patties , when the ratios are just right it's a top shelf sandwich

Yup. I worked at a truckstop diner in the northwest in high school and probably made at least 30 of these a day. And the owner of the place found a sneaky loophole to keep his smoking section for a long time after the law was passed against it. So I got the full experience you are talking about lol. Although, I have always seen them made with swiss cheese not cheddar.
With crispy golden fries, fried in lard, a crunchy kosher dill pickle spear, and an ice cold Coca Cola. Man, now THAT is livin'!!
You can still get a patty melt at most Diner restaurants. At least in the south.

The _Patty Melt_ has been my favorite sandwich for as long as I can remember; some 50+ years now. I had my first PM in a road side diner between Detroit and Cheyenne in the mid 60s. It' still my favorite.

My Mom was born in Southern California. So was I and my kids. We grew up with Patty Melts. They are the BOMB! The caramelized onions are the trick, once you get that down, they are easy. Thanks for the memory of Mom and her wonderful patty melts.

@The Barefoot Kid same, used to live in the valley and they had it everywhere. Best grilled cheese ever and amazing for burgers. The secret is to pan fry the bread in mayo.

Joshua Weissman did a comparative study on toasting bread with butter versus mayo. His conclusion, which I have tested myself, is that mayo works and delivers great color, but must be used very sparingly and spread very evenly, and completely, or is will result in soggy bread. I find that the center of the bread is always softer and mushier with mayo. Butter, on the other hand, is more forgiving and generally results in a crispier texture. I have used mayo on grilled cheese since I was a child, but I have to admit that Weissman was right on this one.
All that said, though, these sandwiches look spectacular. No one touches Guga when it comes to preparing actual -food- meat.
"Indoor" version": This is a really interesting spin on the patty melt. Can't wait to try making one.

Outdoor version for me. Though I must admit I see no reason why it can't be made indoor. Sure it's a bit messy but shield your cooking area and cleanup shouldn't be that bad.

My Father, who was born in Los Angeles 1921, introduced me to my first Patty Melt in 1965, this recipe is very true to the ones of that era and the ones I still make to this day.....only exception, is Rye Bread is a Must!!!

Almost like I did. I'm allergic to wheat and its relatives. Most gluten free bread is not very good, so I don't eat any bread regulary, and buy only if I need it to a dish.

Back in the late 60's when wheat bread was introduced to the world, I haven't had a loaf of white bread in my house ever since.
Gluten free on a shoestring has some pretty easy and good recipes for breads.

Every Patty Melt I've seen for 50+ years is a patty (hence the name), grilled onions, usually American or cheddar cheese, on toasted rye.

They're commonly patties because it's just simpler to make and less messy. Most are made just like a grilled cheese, so you patty the burger and cook it, toss it between bread and put it back in, flip it once and it's done - no fuss. The beef fat serves as the butter/mayo. It's a self-solving problem. Ironically the loose ground beef is the "fancy" way.
It's traditionally done with swiss in most places and was originally made with swiss, but yes, cheddar and American are used sometimes. He made a Guga Melt.

It is a highly ketogenic diet that excludes carbs, with regular vegetables being the only exception. And I did include the yoke. So I did not lack any cholesterol. And guess what? Eating all those eggs had me slim down very fast, while at the same time I somehow grew stronger. The only downside were the bathroom breaks. I eventually quit when I felt my heart began to ache. So yeah. Too much of anything really is bad for you.
