Ingredients Needed:
Texas Toast Bread:
• 290ml (1.2 cups) water
• 1 tablespoon (12g) bread machine yeast
• 3 tablespoons (47g) sugar
• 4 cups (600g) all-purpose flour
• 3g amylase
• 12g fine sea salt
• 1/4 cup (56g) unsalted butter
• 1 large egg
Creamy 3 Pepper Truffle Sauce:
• 1 1/4 cup (200g) mayonnaise
• 1/2 cup (110g) ketchup
• 1 tablespoon (12g) Worcestershire
• 1 tablespoon (4g) black pepper
• 1 teaspoon (3g) white pepper
• 1/2 teaspoon (.5g) green pepper
• 1 teaspoon (2g) sweet paprika
• 3 cloves garlic
• 1/2 oz grated truffle
• 1/3 cup (25g) grated Parmigiano reggiano
Assembly:
• 1 yellow onion, sliced 1/4 inch on mandolin
• 1 cup (216g) buttermilk
• 1 cup (150g) flour
• fry oil (canola, vegetable, etc.)
• salt and pepper to taste
• thick-sliced Texas Toast
• butter for toasting
• 2 cloves garlic
• 3lb (900g) ground beef
• 10 slices Monterey Jack cheese - Jak na to + styl

For those of you who can't afford truffles, you can use porcini powder for a deep mushroom flavor. I add porcini powder to all sorts of things. You can make it by getting a package of dried porcini mushrooms (most grocery stores have them at a reasonable price) and then grinding them into a powder in a coffee grinder you use for grinding up spices.
Asian supermarkets might have mushroom powder too, I don't know how it compares personally but it's probably close
I first heard of mushroom powder probably forty years ago on The Frugal Gourmet. He suggested using it for a stew or sauce needing a little something extra. Best way to go is buy items whole then grind at home.....the only sure way to know exactly what we're getting.
If I want mushroom flavor in a burger, I’ll sauté some mushrooms instead

I made the bread. I couldn’t get amalayse so I used diastatic malt powder which has amalayse in it. It is DELICIOUS! I plan to make some french toast with it too. It totally does taste like a brioche.

Made this today. Never had a patty melt before. This was AMAZING!!! Since I made shoe string onions, I made onion rings as well.
I bought bread at the store for it. I didn’t use the truffles and used black pepper for all pepper. Made for an incredibly cheap meal and that was amazing.

I've worked at Whataburger (many years ago, granted) and I agree with how their food smells. The issue is using the same grill space for frying onions: the onion vapor permeates the oil used for frying, which gets all over the grill, which gets all over everything else cooked on the grill. If the store has been busy or it has been a few hours since they could do a deep clean, it starts to smell. Remember, hydrogen sulfide is why onions make you cry, rotten eggs stink, and farts smell bad.

I also worked at a whataburger before and I think you just didn't clean the grill often enough or well enough when you did you don't need a deep clean to get rid of onion juice and smell because I never had a smell other than burger patties on the grill

The patty melt is fast food while yours is homemade. The first time I tried a patty melt I always loved it from the time of the first week I got hired on august 4.

The book is great, even though about half of the recipes aren't really down my alley, the basics section at the beginning is a really nice reference point to do pretty much anything. I've cooked for quite a while now, but your recipes made me make the leap of faith into baking and my eyes are now open. Getting them gains from kneading the dough and being able to enjoy the soft, juicy fresh bread... bruh.

Yeah I thought the same thing. I wish the recipes in it were more normal for lack of a better word. There are some in there that I would make but the basics section is the real reason to buy the book.

@@Exotic-_ I’m afraid you’re right about that. They’re making tons of food all day long, expected to be ready and hot almost immediately. Some fall down on the job, but most do as well as we should expect for the price (&/employees who haven’t studied at the Cordon Bleu). Josh’s environment (& budget) is quite different. I still love seeing his rendition, but I’d rather see less negativity toward the restaurants. They’re popular for a reason.

I do wish "but better" series kept it to matching the product but made at home and made better. Its okay to rub your bread with garlic and have truffle sauce but then the video should just be how to make a superior patty melt not a comparison
I would like to see a comparison to decent restaurants, that provide take out. Make it more challenging, and appealing. I do enjoy this channel, but fast food seems an easy win because its all made cheaply. Also I would like to see the cost comparison in there of the bought against made if possible.
These million dollar burger joints should use their near unlimited snack resources to mimic a fraction of joshes power
But commercial bread for example does contain a ton of baking additives and enzymes and yet seeks for the exclusivity of being tasty. Josh just uses amylase (or more sugar it’s up to you) and GOOD BREAD. Or MSG in his videos. That stuff is part of your body as an amino acid. I personally think that these additives are pretty ok
I would say it's completely fair as long as it's still considered a patty melt because the challenge is to make a better patty melt at home not make a copy cat recipe that's better.

Hey bud, long time viewer here, love the videos.
Im a young professional that works 80+ hours a week and gets fed at work. I rarely get time to cook, although i do love it. Weekly ill go get myself ingredents to make a meal, or sometimes cook a snack before i go to bed before work. I was wondering if you ever considered doing a video on "setting up your pantry" or "basics every cook should have" simple spices and ingredients that are versitile and can in many combinations add flavour and kick to any meal. Sauce building, seasonings etc. Whenever i cook i find that im missing layers of flavour in my dishes just because i dont know what to buy. Dont know if that makes sense, but wanted to through that out there.

also, not everything *needs* to be made from scratch, not everyone has time for that (I sure dont) - that said can't recommend deep diving on all off these when you get time.

My whataburger hack has always been to say no onions on the patty melt, onion rings as the side, and then I just stuff ‘em in there. Having that crunchy oñyô makes any burger better.

You can also use a pain de mie bread pan if you want the bread to be perfectly squared. I got mine from King Arthur, and I just used for my brioche French toast.

As much as I love a good burger, I'm actually a bigger fan of the patty melt. And I love this presentation, too, esp with the fried onion instead of grilled. Those fried onions would actually be a thrifty and delicious alternative to store-bought French's. We don't have Whataburger here in Iowa; I would still look at eating at one someday. But this will be a profound alternative in the meantime. 😋 Thank you Papa

Hey Josh, I’ve been watching your videos for quite some time now and I really love the recipes you make and how much care and attention you put into your videos
While I understand that comparison videos like this do really well for you, as well as that you’ve kinda taken on a pretentious camera personality for humour.
I really feel as if you are more talented than the need to shit on fast food that people know it’s going to be all that great.
And when people are saying to you that using far out of reach or expensive ingredients is like “cheating” or anything alike it’s not because people don’t like seeing it because they can’t afford it. It’s because when people see you advertise your content as doing -blank- but better, at least from what I’ve come to consensus with from other folks I know who watch your content is that people are kinda expecting you to do out do the product with just technique.
This all being said I’d really love to see some videos that just focus on your recipes and ideas.
I think it would be dope to see you make some more of the food you grew up with and what you like to eat on the regular nowadays

I like the sauce, that looks good. Where I am from, Rye toast is the usual bread, grilled and the sandwich constructed on the gridle. Cheddar and Guda cheese is a great combo and onions grilled but still crunchie is my favorite. Usually have mayo on mine but I will try your sauce. My go to spices are garlic sautéed in butter, salt and pepper with a finish of smoked paprika on the cheeses.

I was a grill cook at Hamburger Mary’s in San Francisco around 2000. All of our burgers were pattymelts on whole wheat. Our premier burger was the Monster Burger which was two 1/3 pound patties, cheese, bacon, grilled mushrooms, grilled onions, scoop of guacamole, lettuce, to, tomato and 1000 Island… all on a pattymelt situation. It stood over a half foot high and held together by impaling it with a steak knife
Hmm kinda makes me want to try the patty melt from whataburger because there was quite a lot of extra stuff put in it and it had to be like a day old to make it "better" must be pretty good.

To be honest, the home made bread makes a thousand times bigger difference than the mayo. Many chefs/big food you tubers also agree that mayonnaise is probably the one thing that's (almost) just as good as homemade.

One of the things I kind of struggle with with cooking is that I see all these great recipes I'd like to try or even make regularly, but for some of the (often perishable) ingredients it often uses just a fraction of what you'd normally buy. Any tips on how to manage this / maybe it's an idea to make a video that focuses on an array of dishes that can utilize them throughout the week / month?

Hey Josh, That is an amazing looking patty melt, and I am totally going to try that recipe. However, my wife has made some interesting points about how your 'But Better' series does not adhere to the restaurants strict quantity and ingredient list and she would really like to see a series about that. Specifically on how you can make a fantastic and delicious meal in the same restrictions of ingredients and portions as these restaurant chains have. We both absolutely love watching your videos; However, if you are going to flex on a 'But Better' we feel that the true spirit of it means you would stick within the same parameters of said chain restaurants. Having Josh cook with the exact same standards the chains have to me misses the point of the show. He doesn't expect anyone to make his version of a Big Mac everytime they want one. If you notice he only does major chains and huge companies he never picks on some small family owned diner. He attacks McDonald's......which is not only one of the 10 largest companies in the world....it also doesn't matter what anyone says about them people are going to eat it anyway

I love the Whataburger patty melt, prob my fav fast food thing to eat. Only issue is depending on the Whataburger you go to you can get very varying qualities. One time I got a patty melt that only had like a tiny drop of the sauce on it which is prob my favorite part. Other places I got no cheese, but the one near my home never disappoints

We just had Whataburger for lunch yesterday and your video makes me want to have it again today. My go-to is the #4 double meat double chz with mayo. They are generous with the jalapeños, but they're usually just piled directly in the middle.
Whataburger is delicious. I live in New Mexico and we have the Green Chile Double and it’s like pretty damn alright. I still prefer to make burgers at home, but I ain’t gonna knock WB.
