  • hey fam, today i share with you this delicious steeped goat meat plantain called KONDRÉ. its a meal from the western region of Cameroon.

    Nice one. Missing those days of going to the village for annual meetings. Kondre with a whole goat, the goat's head would be sitting right at the top of the pot staring at me... yummy. I miss those days. Thanks for sharing 😊

    Love this!! But 25 minutes? My plantains usually take 90-120 minutes of cooking before they get soft. The meat I often cook an hour more....

    That’s a great tip to wag goat meat with lemon .
    That wet fry goat meat looked yummy ,could imagine the aroma..😋Not a fun of plantain .so would skip that part..Lol your wooden spoon has seen better days.

    But the timing of the plantains is very late with this our bamenda dry plantains. Hope u know what l am talking about. Hope it wasn't change a thg if l put my plantains first & steam for a while before putting the meat 😊😊

    I visited the west and eat this in a restaurant, I ask the cook and she gave me the make of the spices, but guess what, I just finished cooking but I just cooked pepper soup. 😭😭😭😭😭😭😭😭

    Looks yummi. But thé plantain has to stay for long. Or else when it gets cold it becomes realy strong. 2h Will do

      Yep, and it was perfect even when it was cold. If you followed I said back home it's cooked for longer period preferably over night. So here ( Europe) the goat and plantain are not like those back home lol (premature) reason I said monitor the food to b sure your plantain it's really soft😊 so it can +/- 1hr.

    This, is, what am, preparing today,. So, curiosity took me searching. I boil my plantain then just pour the stew into the already boiled plantain. This prevents the nutrients in the medicinal spices to be over cooked

    This is my traditional meal and I feel almost offended watching this video. Several points of correction:
    -Kondreh is more of pepper soup plantain than stewed goat meat as you suggested. That explains why you got it wrong from the beginning.
    -Tomatoes is OPTIONAL in kondreh so instead of using canned tomatoes, you should have just left it out. The tomatoes need fo be fresh!!
    -No need to boil the meat separately at the beginning, especially with little water if eventually you want to use the broth from it in the kondreh!! You might aswell have let it cook with the plantains.
    -What is the point using palm oil and then bleaching it again? Bleaching it destroys the taste and colour which are both indispensable for kondreh. Bleaching it defeats the purpose .
    -With Kondreh, all the spices, plantains and meat are supposed to cook together. Each ingredient should benefit from the presence of the other ingredients in the pot. Frying the spices separately and letting it cook before adding the other ingredients makes the taste evaporate in the process. Kondreh is a closed-pot dish which ensures that the flavour doesn’t get lost along the way.
    -Kondreh should stay at least 2-3 hours on the fire not 20 minutes as you suggested. Your Kondreh is ready when you cut the plantains and see oil dripping from it. The plantains have to be so soft that even when the food gets cold, it still remains soft. With your recipe, the plantains would be hard when the food gets cold or when it sleeps overnight.
    PS:There is only one method of cooking kondreh. Every other method is not kondreh. It’s something else. This is a very respected traditional dish and there is no taking shortcuts with it.

      First and like i said in the video tomatoes are fresh tomatoes in a can I'm sure you heard me say is optional?. Secondly evrything is cooked with plantian back home overnight ( like i mentioned in the video) in my village bafang to b precise but i prefer to do mine like this as mentioned in the video again. so i did not do the one pot method as frequently done during funerals.3rdly, oil for it is bleached atleast that's how i saw my grand ma do as preference and i prefer it. weather you bleached yours or not does not make yours better, and please as much as i respect your opinion but listen when i talk of what i do or did as variations.       PS. there is taking "shortcut cuts" to every original meal as long as you mention that one is your preference. Is not about respect meal or not. And you are not the only bami here lol. Not evryone likes to eat" dark dry funeral" kondreh in their homes when they can play around it to suit their preference. Thats cooking for you.

      Bleaching palm oil DOES NOT defeat the purpose. Bleached palm oil still has a distinct taste. It won't taste like vegetable oil.
      Come on now...give her some credit. If you close your eyes and they put a spoon of this in your mouth,are you telling me you won't know its Kondere 2.0?😉😉😉😉
