I don't need the flour I just add a pinch, less than 1/4 teaspoon of baking soda, to the beans. That will thicken the beans and reduce the gas from the beans. It's chemistry, beans are an acid and the baking soda reduces the acid thus decreasing the gas.

Iâd like to add that some Louisianianâs may do theirs in a different order. Like me, Iâm extra. I fry that trinity down with the sausage and Tasso and set to the side. Then I double soak my beans (you donât have to but after I caught a rock in my mouth I donât chance it). Now I have to have some ham hocks in mine. I boil them for two hours, pull them out and use the stock from that for the beans, add 6 cups of water then let them beans roll for an hour. Then I put all the meat back in and smash some of them beans. Roll on medium for 30-45 minutes while the rice is cooking and cornbread. Like I said, Iâm extra and thatâs how I was raised to do it but this Louisiana girl approves sha!

Louisiana is a mixed culture but it's mostly a black culture. Creole people consider themselves black but they are a mixed race.
Heâs Cajun which is slightly different from being creole. Black folks can cook good but Cajuns are up there with the good home cooking.
