Ingredients
2 red peppers
1 yellow pepper
130 g of pennoni rigati
2 cloves garlic
anchovies in oil
Taggiasca olives
tuna fillets in oil
salted capers
chili
parsley
basil
extra virgin olive oil
Preparation:
Cut the peppers in half and place them on a baking tray lined with baking paper. Pour a little oil and put in the oven at 200° for about 30 minutes.
While the peppers are cooking, heat the salted water to cook the pasta.
When the peppers are cooked, remove the skin and seeds with a knife.
It's time to cook the pasta, I chose pennoni rigati but you can use your favorite pasta.
Place the peppers, some basil leaves, oil in a container and blend everything.
Now put a drizzle of oil, garlic, anchovies in oil, parsley stems, some salted capers (rinsed under water to remove excess salt) in a pan and fry for a few minutes. Add some Taggiasca olives and finally the chilli pepper.
Now add the pepper cream, remove the parsley stems and the garlic.
Place the cooked pasta in the pan and add a little cooking water to mix the cream.
Lastly, add the tuna, stir-fry a little to add flavor and add the chopped parsley.
The pasta is ready to be served and eaten!

Excellent! One of the best pasta recipes I have ever prepared. Did not find the Taggiasca olives so I replaced them with Kalamata olives and the taste was still spectacular. 😋

Looks delicious the technique to make the pepper crème is great. I would just substitute the tuna for mushrooms. Maybe a touch of white wine. Thanks for sharing.

This recipe is so good that even if you had a fish allergy and eliminated all seafood elements, it would still turn out tasting amazingly! Trust me.
Definitively, not needed at all, just the peppers and the olives make for a delicious sauce.
What do you guys recommend as a substitute to the fish, I just can’t see myself putting tuna, let alone canned tuna and sardines in anything I make. 😅

@@missym877the canned sardines just dissolve into the sauce and just leaves a richer umami flavor if you’re worried about chunks of fish in the pasta (:
Well, I’m with Shaymin in terms of my ability to enjoy a bit of anchovy as long as it completely melts away into the background like with Worcestershire sauce or certain Ramen dishes, etc.
As for this dish, perhaps you’ll like my approach. I brown off some de-cased, spicy Italian sausage, chopping it into chunks as it renders. I remove it from the pan and then at :58, in the same pan, I only add the olive oil if I need it. I then add the garlic, parsley stems and leaves, capers, olives and then I follow the rest of the recipe except I won’t add tuna. At that point I just re-add the cooked sausage with maybe a splash of pasta water. I’d just top it with parm or pecorino when it’s done and voilà!
I don’t know what Italian folks think but it works for me. Best of luck!
