How to make Malaysia Mee Hoon Kueh Dough aka Pan Mee

  • Mee Hoon Kueh or also known as Pan Mee in Malaysia is a type of noodles made of wheat flour, egg, water, and salt. Traditionally, it's cooked in an anchovy's broth, with sweet vegetables, and top with deep-fried shallots and anchovies.

    Improvement on your pan mee dough by stir up water, egg and water before you put into the flour. it safe more time :)

      The only brand I use is Marcato pasta machine...but I heard this one www.amazon.com/Philips-HR2357-05-Pasta-Maker/dp/B00REJMIJ6 is pretty good.

      If pinch, no measurement, just don't make it too thin. For the machine, you can run thru #3 twice. Thanks.

      The gluten needs to rest so the dough will not tear, shrink or curl back when you roll, stretch or pull it.

      You still need to let the dough rest if you re-knead it

      You don't have to re-knead the dough. However, it's always good to let the dough rest, so you can pull or stretch it easily.

      I am not sure it will work. However, just remember to use the dough at room temperature.

      We used to make a lot and freeze the noodle in air tight bag.

    You should always crack an egg into a bowl to smell and check if its spoilt or not, then only add into a batter or flour

      Years ago eggs were processed differently. You would always get 1 or 2 that were spoiled. If you crack the rotten egg in your mixture, then you contaminate the mixture and you would have to throw away the mixture and start over.

    Your dough abit wet. Hence the sticking towards the end. If you were to further thin out the dough using the pasta machine, it might tear and break up. Just my 2 cents

      d0minicting Ya, this dough is best for traditional "pull & pinch/tear method. You can add additional flour, if using pasta machine. Btw, Thanks for the tips and comment.

    The dough can rest 30 mins as you are not trying to make a bread, no need to rise the dough but good video

      It's left for an hour to relax the dough, otherwise it would be too rubbery. You will be surprised by the texture difference ;D.
