INGREDIENTS
------------------
1-2 aubergines (eggplants)
2 courgettes (zucchinis)
Fresh basil
Firm tofu
Fresh tomatoes (optional)
Lasagna sauce:
1 onion
Dried oregano
1-2 tins plum tomatoes (or fresh tomatoes, chopped)
1 avocado (optional)
Salt and pepper
Keto breadcrumbs:
1 part psyllium husk powder
3 parts almond flour
Salt
Olive oil
DIRECTIONS
-----------------
1. Slice aubergines, courgette, onion, tofu and tomatoes.
2. Grill/fried aubergines and courgettes with olive oil till tender and golden brown on both sides. Sprinkle salt to taste.
3. Make lasagna sauce by frying the onion with olive oil in a pot till tender. Add a few pinches of dried oregano. Pour in 1-2 tins of plum tomatoes. Add salt and pepper to taste. Bring to a boil then simmer till the sauce thickens. Finally add in 1 mashed ripe avocado. Stir and simmer for a few minutes and the sauce is ready.
5. Assemble the lasagna by layering the ingredients in the order desired. Sandwich each layer with the lasagna sauce. Top with the bread crumbs (instructions below)
6. Bake in a preheated 200-220C/400-425F oven till it’s piping hot and the breadcrumbs are golden brown (approx 45 minutes)

Keto breadcrumbs:
Combine all dry ingredients. Add oil and roughly mix with fingers till it forms a crumbly texture.

Tip: you can salt your aubergine and courgette first and leave to draw out the moisture (for at least 30 mins then wash and dry) and it will take less oil

This looks really good. The only thing I'd change is cooking down the sauce until it's thick and almost pasty, to cut back on the juiciness after baking, and frying the tofu beforehand. I think I'd add olives to mine too, love olives in a red sauce

If you want to use less oil you can soak the aubergine slices in water before cooking 🤗
Always an issue when I cook eggplant. You can back the pieces first and not so greasy. But I don’t have a large enough sheet pans and takes too long in oven.

I was surprised that you didn't cut the nub of the Zucchini off.....and then it occurred to me that I DON'T KNOW WHY I always cut them off!!😂I can't wait to try out this recipe EXACTLY like you do it. I love all veggies and tofu so this is going to be a real treat.. I am checking out some vegan cheeses also nows so I think I am going to sprinkle some over the tofu also. I don't have a dog in the vegan debate I just don't eat or crave meat hardly at all. I do have psoriatic arthritis so I am trying to cut down on dairy period. I am not supposed to be having "nightshade" veggies at all but I will not cut tomatoes or aubergines out of my life. It is not going to happen . What I will do is not eat them every day.Thanks so much for another beautiful recipe.

Oh this is freaky, I was just about to go in the kitchen to cook aubergine parmigiano (because I'm not vegan... 😄), then this video popped up! It's one of the dishes I love especially in winter, also useful for a batch cooking (for my packed lunch next week too!) I've never used avocado in tomato sauce but I will copy your recipe and add some tonight. And of course, I'm going to bake a batch of crusty bread to accompany... Thank you Fan, yum yum. 🙂💗🙏

Before i went keto, i didnt really like making vegan lasagna altho it tastes indulgent indeed, that's because i had to cube up the veggies (carrots, aubergines, courgettes) to mimic the crumbly meat shape. but you showed me the keto version where i just need to slice them up, so it takes less effort. thanks!
Ooo looks lovely! I was thinking you could perhaps add some nutritional yeast to the 'breadcrumb' mixture to give it that slightly cheesy flavour too. And a layer of big mushrooms would be yum as well. Look forward to trying this one! 😊

Do you do a carb refeed sometime? There are some cells that just don't do well on keto 24/7. Also studies have shown a ketogenic diet decreases microbial diversity after while. I am a nutritional biochemist and my research currently focusses on the therapeutic potential of a ketogenic diet, I also follow a cyclical ketosis diet sometimes, so I am not arguing against the potential benefits (i.e., epilepsy, insulin resistance, bacterial overgrowth etc). However, not enough research exists regarding the long-term effects of a KD. I am more concerned for the long term health it will have ,especially on the thyroid, other cells that require glucose for energy and the diversity of the microbiome. A KD, low-FODMAP, carnivore diet and other elimation diet should be done only temporarily. You might feel great for up to a few years but eventually you will feel the repurcussions of a lack of microbiome diversity. The microbiome produces about 90%-95% of serotonin, 50% of dopamine, and plenty more neurotransmitters. It is also responsible for SCFA production and maintenance of the gut intestinal lining. Not to forget that 80% of immune cells are found in your gut and are regulated by a healthy diverse microbiome. Don't just follow such a restricted diet long-term without consulting your health practitioner (i.e., GP, GI & nutritionist) just because it help with weight lost. Most reason why people lose weight on restricted/elimination diets is usually because of the exclusion of junk and processed foods.

Yes to both. Your body goes into ketosis either through reducing carbs or fasting. When the body is deprived of glucose the ketosis kicks in.

Hope you can help me understand I keep going I keto, I do eat cards pizza rice potato bread. Yet I have keto symptoms and show that my blood keto levels are high and my keto urine stick. Does this mean I’m diabetic? Or can my body no longer use carbs?

How do you keep the vegetables from pouring liquid ? To me that would end up looking like a soup with lots of liquid

Great channel. I'm vegan. Is it recommended to enter into a vegan keto lifestyle all-in all at once, or could one enter it gradually?
Depends on your needs. If you are entering a keto lifestyle to see if it alleviates a severe ailment, you may want to start all in to get a quicker response of your body. But for many it's easier to gradually change your diet to eliminate sugar and starches and increase healthy fats. Watch many of these videos so they can inspire you with meal planning and substitutions. When I started I was a diabetic, so I kept track of my glucose levels, and could check how the elimination of starches helped me tremendously. I could also discover foods that my body was particularly sensitive to (like she said, some people may react more to foods like tomatoes)
