this is interesting about the acidity part...
for me, I do believe it's important not to overcook... that what I've learnt is the number one reason for the dryness.
I have cooked (not too thick) broiler chicken breast, on a stove top and in the oven.. it was marinated over night with acid(lemon juice). It was well cooked and it wasn't dry either.
