Msakhan - Chicken onion rolls with sumac - Musakhan - مسخن رولات

  • Musakhan (msakhan) is one of the most popular and traditional Palestinian dishes. Simple ingredients ( chicken, sumac, onions and olive oil will bring you an amazing dish full of flavors)
    The recipe will serve 35 rolls
    Ingredients:
    1.2 kg Whole chicken
    1 kg Onion (6-7 pieces)
    5 tbsp Sumac
    1 teaspoon - 7 spice
    100- 120 ml - Extra Virgin Olive oil
    5 pieces - Saj (Shrak) bread, you can use tortilla bread also
    50 g - Pine nut (toasted or fry)
    1 teaspoon salt
    1 teaspoon black pepper
    spices for chicken stock (bay leaf, cardamon, coriander seeds, garlic ect)
    Directions
    1. Boil chicken in water and spice it with black pepper, cardamom and salt, onion, garlic ect. for about 45-60 mins. When the chicken is cooked remove bones and make it slices by your hand. Set aside.
    2. In a big saucepan add the sliced onion with 60-70 ml of olive oil and cook over medium heat until soft about 10-15 mins, then add pinch of salt, pepper, 7 spice and sumac 5 tbsp stir and simmer for a few minutes, let the spice and sumac develop a taste. to make stuffing moist, add some of chicken stock. Add the cooked chicken to the cooked onion, little of olive oil and toasted pine nut and mix well softly to combine.
    3. Cut the 1 piece of saj (shrak) bread in to 8 squires then fill it with chicken stuffing and roll it, then brush from top by olive oil then bake in oven for 15 minutes, another 5 minutes from top.
    Serve it with yogurt aside.

    Well, this nice, Jewish, Zionist guy made Musakhan yesterday, along with tanoor type bread. Okay Palestine, let's talk! This looks like a great idea for the leftovers. My Musakhan was a chicken confit done in a lot of olive oil, I followed the spicing to a tee, but it still needs a little kick, and I don't know what. It is definitely a keeper dish, a bit time consuming for a non cook like myself, but definitely worth making, and the Arab 7 Spice mix is really amazing! Intuition tells me to double the amount the recipe calls for.

      any thin bread will actually work, like like samosa or filo pastry rolls ect.

      hi, 7 spice mix contains black pepper, cumin, paprika, coriander, clove, nutmeg, cinnamon, and cardamom together until evenly blended. Store the spice mix in an airtight container.
      or you can use your favorite chicken spice

    maam what cqn i substitute coz we dnt have sumac here in philippines. does indian also have these spices..

      Hi, you can google where to find sumac spice in phillipines, bcz it is a key ingredient for this dish. I did find few sites like www.lazada.com.ph/products/sumac-spice-100-grams-i240976680.html this for example.
      if you want to substitute it, most close to it is lemon juice. sumac spice is balancing sweetness of onion in this dish.

      @@karendelacruz6358 the key of this dish is sumac but lemon will give same sourness to the dish, let say it will be 70-80 % of sumac taste.
