Herb Lamb & Baked Potatoes - Melt in your mouth

  • I serve a lot of lamb in our household, as it's a staple and everyone loves it.
    Cooking the traditional way, just as I was bought up has helped to heal my body and also taken me back to when my mum used to cook for is. Everything was super simple, fast to make and delicious. This marinade is as easy as mixing key ingredients together and using them for any type of meat or vegetable. Today, I happened to use it on the lamb cutlets.
    Potatoes are another staple in our household. I cannot eat sweet potatoes, so having white herb potatoes is my favourite side dish add on! Putting that all together with some fresh greens, feta and avocado and you have a meal that's not only delicious, simple and healthy but also healing.
    This year is all about healing for me, and also bringing that healing to my family as well. We are all benefiting from eating simple foods with our stable herbs and spices. Next time you are stuck on how to marinate your dinner or potatoes ,try this as I guarantee it will be a winner!

    Here is the recipe below for you
    Ingredients
    Pack of 6-8 lamb cutlets (grass fed and organic)
    1 lemon
    3/4 cup olive oil
    2-3 garlic cloves chopped or diced
    3-4 shallots or one onion
    Pinch of salt
    Oregano, rosemary and thyme dried
    lamb herbs pre bought
    For the potatoes
    About 4-5 potatoes with the skin off
    2 tbsp coconut oil (I like a lot of oil)
    1 tbsp salt + veggie salt
    Oregano, rosemary and thyme dried
    Tips
    Don’t forget to add your chosen greens or salad! Best eaten with a few slices of pure goats cheese.
    Allow the lamb to marinate in the sauce for at least a couple of hours.
    Take the lamb out 30 minutes before cooking so it’s at room temperature. Trust me, this is the key to succulent lamb cutlets!
