The buttons for setting the current and voltage do not look very intuitive to me ... I prefer an ON/OFF button with a clear function. But if the price is good I guess I guess you can get used to that. Can you put more of these in series/parallel to increase the total voltage/current?

For me they look ok, because I never used anything else 🤭
I will ask Peaktech about series/paralel connection.

I got a reply from PeakTech: it is not recommended to connect switching mode power supplies in series or parallel, because they can get confused by the voltage from the other power supply and cause unwanted behavior. For such connections linear power supplies are best to use.

I have not seen such problems. What you set is what you get.

Can I use this to charge a phone at a higher amp other than 1.2 or 2 and go up to 3-4amp

It depends if the phone knows how to use the extra amps.

Is the cooling fan of this power supply always on? Or does it stay off in case of no load or little load?

I think it's mostly off, because I never hear it.
