@@walkernatalie It's perfectly fine to eat during its shelf-life. If the brine is cloudy, only water and salt was used (and whatever spices)- this is considered fermentation. If vinegar and sugar were added with the water and salt- then it is considered pickling. Fermented vegetables have good bacteria (probiotics) and it's really healthy and great for your gut.
It’s driving me crazy you had a butter knife and didn’t think to slip it under the lid to pop the air out letting the lid go free. That’s what I do! I feel you. Live alone too and constantly have this issue. I also keep a silicone or rubber based string or mat to use for grip on the lid. Rarely warming up the jar with hot water helps!
Okay so. The knife tapping trick, you have to hit the lid edges hard enough to dent it, because that's what breaks the seal. Go around the edges with the back of a heavy metal knife, make several smal dents, and it'll open right up. You're barely tapping it in the video, you gotta really get in there!
I wouldn't be above embarrassing myself to go ask a neighbor for help. Lol i once showed up on my neighbor's porch with a can of chickpeas bc i hadn't bought an opener yet.
Use a small spoon, put it in the crack of the lid and push down the handle so you have leverage. As soon as you hear a pop, the vacuum has been compromised and it'll be easy peasy to open
Fun fact: get a metal spoon and do the same thing like you did with the knife but using the back of the spoon and hit all around the jar lid and then twist that’s a good trick too
trick is to get a little air in - you can stick knife in between the jar and the cap right where it is closed - slip the knife under the cap .OR if you do not need the cap - poke a hole with the knife right on top. Btw the pickle juice should ideally be clear - perhaps it has fermented by a yeast and became white
I have an ice cream scoop that is kinda hook shaped if you look from the side, I put the end of the hook under the edge of the lid, slightly press down and the suction on the lid releases and I can open it easy peasy. Works every time.
I have never had to ask for help opening a jar- two tricks: 1) seran wrap instead of a towel. It really grips. 2) bottle opener, use it like you would on a beer but just do it enough to get air in but not warp the lid.
get a silicone pot holdier* mitt. The small ones that you use for taking hot things out of microwave. It always works for me. I have extremely low hand grip strength because of my illness. I find it works better than my husband. Sometimes for the really tightly stuck ones, A silicone grippy mat on each hand works even better. The ones that are flat with a zigzag design to enhance non-slip works even better.
Hot water girl run the edges of the lid under hot water for like 2-4 mins then opening it is simple (because metal expands from the heat), i know because same when my husband isnt home this is literally me.

When I use a knife it bends, if you use a spoon instead, the parabolicshape makes it super strong and won't bend on you;)

Hot water. Metal expands and glass doesn’t (as much) so if you heat the lid it will loosen. Not too hot to touch, just until it is warmer
Put a rubber band around the lid and use it for extra grip.

If you have silicone gloves or a mousepad made of silicione, you can use them instead of a towel. They are more effective at opening jars.
Turn it upside and tap the lid flush to the counter on the counter. If that makes sense. I dot it every time and it’s easy to open
Put a spoon under the rim of the lid and bend the lid upwards. It will pop and the lid will be loose. :)
I tap the lid on the kitchen floor then use a clean unused dish scrubby for grip.
When things get cold they tend to expand, so I will run my jars under warm/hot water and it almost always works

Why is the juice cloudy?
They are fermented pickles. Probably lacto fermented.
Try running hot water on the seal for a minute next time. It loosens the lid
Hit the bottom with the palm of your hand until you hear it pop then open it, works every time
It doesn’t always work but flip the jar upside down in one hand and smack the glass bottom two or three times like a ketchup bottle.

Have to hit it around the whole edge hard enough to dent. Spin and wack.
