Although not a proper British Fruit Cake, this Light Fruit Cake should not be ignored. It has lots of what I consider the best part of a fruit cake, candied fruit. I love this cake's delicate almond flavor and you don't have to wait weeks to enjoy this tea bread, as it can be eaten the same day it's baked.

    This is the absolute best fruitcake recipe. I made it a few months ago and loved it so much, that this Christmas I made several small loaves to give as gifts. This is now my go-to recipe for fruit cakes. Stephanie Jaworski is the best!!

    For this Light Fruit Cake I like to use a combination of candied mixed peel and candied cherries (can use either red or green). Candied fruit is actually preserved fruit that has been dipped several times in a concentrated sugar syrup. If you can't find candied fruit, you could just other types of dried fruits.

    i have tried it today.it tastes amazing.i have never tasted such a delicious cake before..i used fruit juice to soak my dried fruits.and 1.5tsp of baking powder instead of 1.

    I tried it, it turned out so so good. Covering it with foil if it’s browning too much is the best technique ever, I use it for my all tea cakes. You’re the best 👍🏻👍🏻👍🏻

    I made this recipe, it turned out fabulous! Family and friends just love it so much.
    I used a self raising flour and marinated the dry fruits for 2 days. Added cinnamon and almond powder and the cake turned out to be the yummiest recipe I have ever made!!

    I've just made this! I made it as an alternative to regular fruit cake, so I baked it in a round tin and reduced the oven time a bit. I also added 1 tsp of mixed spice. I was worried a christmassy marzipan and icing covering would weigh the cake down, but it worked brilliantly. This will definitely be made every year instead of the typical heavy christmas cake! Thank you for this recipe ❤

    Hello Stephanie, I made it yesterday and it was a hit , I have just made some adjustment , I put one cup of raisin instead of the fruit and I didn't put almond extract , I just put vanilla extract and I like it so much it's really nice to eat with a cup of tea and very light cake . Thanks for sharing and I hope to try it with Fruit next time .Thank you very much indeed.

      @@Poodle.5 Your oven calibration needs adjusting, read your oven manual for instructions, then buy a oven thermometer, to make sure your calibrations are correct.

    My dad's mother had a recipe like this that she ended up taking to the grave since she never wrote it down anywhere. I think this is the closest one I've found that would be like what she would make, since I've read all her recipe books she used. I can't wait to try this recipe out and surprise my dad!!

    Usually a dry cake is over baked. Your oven may be running hot so the baking time will need to be less. Check it with a toothpick earlier and take it out early if it is done. Time should only be a rule of thumb. You could also consider buying an oven thermometer and compensating.

      Nazeema Rameez just skip the alcohol, no substitute is required. Dried fruits are dipped in alcohol to get that flavour.So, skip it of you don't wanna have alcohol taste in your cake. Hope this helps.

    The colourful crumb reminds me a lot of a Jamaican Christmas cake I made some time back. The light colour is most attractive, and the rainbow colours of the candied peel and cherries make it very festive. Kids will surely prefer this to a dark heavy cake. The demo is very clear, paced just right by one of my favourite CZcams presenters.

    Most grocery stores in the States have candied peel during the Christmas season. Some stores do carry it year round, or you can find it on line. Amazon does sell it.

    A little tip is add like atbsp of flour from you bowl in the fruit before adding it helps so it doesnt sink to the bottom,

    Hello! I'm Korean and I'm your HUGE fan!! Actually I've been watching other video recipes at CZcams, and one day I happened to watch yours. Since then, I'm not watching any other recipes at all!! I like the way you explaining things so calmly and it's really helpful.
    And most of all, as I'm living in Korea, here we all use weighing method(and Celsius), but when I see most of videos, they were using volume so it was kind of difficult.

    I ordered online fruitcakes from Clayton Fruitcake Company and from Trappist Abbey Fruitcakes in Oregon. THEY WERE HORRIBLE.
    I used to get awesome fruitcakes at the Safeway grocery store. I'm gonna try that next Christmas.

    I LOVE this recipe.
    I made it last Christmas. I injured myself a few days before, so plans got downsized, but I still made this.
    I am making it today, in October, as a Harvest Fruitcake, with dried cranberries, apricots, raisins, both regular and golden, candied orange peel, and the green angelica from a candied fruit mix. But I've already bought candied cherries for Christmas 2022 to make this again.
    Thank you. This is a perfect blend of flavors and a beautiful texture, both for slicing and eating.

    You can do that. I would keep it at the same temperature, but the baking time would be different. Not sure of the time as I've never done it that way.

    Yes, you can make this recipe by hand. You can really use any kind of rum or brandy.

    I tried using lemon juice instead of milk on the second trial. it taste just as good! It also remove the buttery oilness giving it a refreshing taste. It is awesome recipe!! ^^

    I have made this fruit cake. My suggestion is that you make a double batch. Even the best fruit cake is something that I like to eat less frequently, but what I do here is I chop up extra cake and add it to Stephanie's vanilla ice cream recipe as I pour it into a shallow pyrex container. Use thick chunks of the cake for this. If you think you like fruit cake, wait to try fruit cake ice cream.

    Can I bake without the ground almond ...am not really a fan of almond...so gonna try making this fruit cake this Xmas ..looks so lovely 😊...your recipes are always the best I’ve come across....thank you for always taking your time out to make us understand every bit of teaching on here🥰

    Hi Stephanie ! You are just amazing. I love the way you explain various possible ways and detailing each and every aspect. I tried this recipe came out so well ,but only thing was outer layer was not that soft!😐.
