  • Mission: Fresh Food Friday introduces the ECU community to simply prepared, healthy foods and their nutritional facts at various locations on campus. A well-being ambassador demonstrates how to quickly prepare a snack at home.
    Chunky monkey banana bites
    Ingredients:
    -Bananas
    -Peanut Butter
    - 1/2 bark of melted chocolate
    -Parchment paper
    -Small baking sheet or container for freezer
    Steps:
    1. Slice bananas into slices. Place half of the slices on a lined baking sheet and set the other half aside.
    2.Heat up the peanut butter in the microwave for about 30-45 seconds. Spread melted peanut butter onto the top of each banana slice. Then top with the banana halves that were set aside.
    3.Freeze the peanut butter stuffed bananas for about an hour.
    4.Heat up chocolate chips and dip frozen bites into the melted chocolate, and then place them back onto your lined baking sheet.
    5. Place them back into the freezer until ready for snacking.
