The hamstring is a pennate muscle that is used isometrically. Never do leg curls, they will completely fuck up the delicate coordination needed to run.

The problem with nordics is thay you can't get as much stretch as with a leg curl, being that your hips are extended, therefore Hamstrings relatively short already at the hip joint. I still think it is a good exercise, and being that I train in a home gym, this is my leg curl.

It’s not about knee bend as you can work through a good range with a Nordic with A LOT of tension on the muscle and achieve a stretched position on the hamstring. However, this does not change the fact that you are extended at the hip and as far as I can think, you can’t change this with foot position. As mentioned above, you could in theory use a GHD to be flexed at the hip… but I think trying to maintain this is going to be very suboptimal and distract from the intended muscles you are training. Basically, if you have access to a leg curl (and are training for hypertrophy as your main goal), I would use that, if not I would perform nordics. That’s how I rationalise my training anyway.
To add to this; while I feel like this is an interesting point, I also feel like this is the most tiny minutiae of detail and I really would not spend much time thinking about it unless you are a very competitive bodybuilder. Most of us have too much fat for this to be a concern from an aesthetic perspective and from a function perspective I would be very surprised if there would be any noticeable difference between someone who uses nordics or leg curl.

Just because that specific head of the hamstring isn’t being stretched to its max capacity doesn’t mean it’s not doing anything. If you look at EMG activity of that head, it may not be firing to the fullest, but it’s still contributing. Muscles are never fully “off” like that
