First of all, it's my birthday month but also it's when my husband proposed and then we got married the following year! So I had to whip up a cake. But this one's a little different - it's a cookie inspired one...a Chocolate Chip Cookie Layer Cake with a rustic twist!

Chocolate Chip Cookie Layer Cake Recipe:
1 Cup Sugar
1 1/2 Cups Brown Sugar
1 1/2 Cups Melted Butter (unsalted)
2 Egg Yolks
2 Eggs
1 Tbsp Vanilla
1 Tsp Baking Soda
1 1/2 Tsp Kosher Salt
3 3/4 Flour
3 Cups Chocolate Chips
Buttercream:
1 Cup Unsalted Butter, Room temp
4 Cups Powdered Sugar
Pinch of Salt
1/4 Cup Milk
1 Tsp Vanilla
Olive Twigs
Flowers
Directions:
In a bowl mix the Sugar, Brown Sugar, and Melted Butter. Then add the Yolks, mix again, then the Eggs, 1 at a time, mixing constantly until a ribbon texture forms.
Then add the Vanilla, Baking Soda, Salt, Flour, and Chocolate Chips, mixing until a nice batter forms.
Prepare the cake layer pans with parchment paper. This recipe can make up to four 8-inch layers.
Bake the cake layers for 25 minutes at 325º F. Then let them cool completely. Remove from the pan.
In another bowl whip the butter until fluffy. Then add the Powdered Sugar, Salt, Milk, and Vanilla, and whip until the Buttercream forms.
Pipe the buttercream between the each cookie layer. I piped twice around the edges so there would be spill-over for that rustic quality.
Then decorate with foliage. Serve and Enjoy! xoxo

The folding technique for the round pieces of parchment is a great idea. I do a slightly varied version and can't believe most people don't know about this amazing trick.
It came out so beautifully with the flowers and foliage tucked on top and around. Loved it! Happy anniversary and early birthday to you! Hope you spend it doing something special and fun.

I made this tonight. but instead I used a 13x9 pan..a little sticky when spreading it out in the pan. but it came out so delicious! I will definitely be making this again!

I made this. I one third the recipe cause I wanted one medium cake. Also I didn't have as much chocolate chips so it was mostly cookie that chocolate chip. It turned out amazing on the looks and no hassle. But the cookie was kinda decent. Nothing too amazing but I'm sure with the icing and extra chocolate chips it would be amazing. But the cookie recipe on its own isn't like a waw. But dipped in milk they taste amazing
