I'm not going to pretend I think it's a bit weird when people say they don't like cake, but those people still deserve to celebrate in the normal way...with a cake. So this cake is especially for them because it's made out of cookie! No one doesn't like cookies, right?
Recipe -
For the cookie layers...
85g soft unsalted butter
100g light soft brown sugar
50g caster sugar
1 lg egg
1/2 tsp vanilla extract
125g plain flour
1/4 tsp baking powder
1/2 tsp salt
175g chocolate chips
For the cookie dough...
120g soft unsalted butter
95g caster sugar
45g demerara sugr
80g plain flour
25g cocoa powder
1/2 tsp salt
75g white chocolate chips
1/4 tsp vanilla extract
10g yoghurt or buttermilk

Hi Jemma, I want to thank you for your videos, your cookbook, shop and love of baking. I have been struggling with an eating disorder for three years now and it has come to a point where I need to be hospitalised and am going into in patient treatment on Monday.
Your recipes have honestly helped me so much and some days baking one of your cakes and having an afternoon tea with my family is the only thing that helps me escape my ed thoughts. I visited your shop in 2017 and I was so excited that I ordered 4 cupcakes in a sitting (I was only in London for 2 days)! It was one of the best memories of my holiday. I look forward to visiting it again and hopefully I will get to meet you one day. To the power of cake, cookies and all things sweet 🙌🏼

Not sure about food regulations outside of the US, but here the CDC urges to bake raw flour before putting it in edible cookie dough as its one of the leading cause of salmonella poisoning (just as important as cooking raw eggs). I just learned this a few weeks ago from an NPR article and was really surprised!
Depends on the country. Where I'm from there is no need to cook raw eggs, and the same goes for flour. Food regulations are different in every country, as well as the risk of contamination is different for different areas.
If you are concerned about any risks I would advise spreading the flour on a baking sheet and baking at 150*C for 10 mins
I've made edible cookie dough for my own snacking purposes. I microwave the flour until an internal temp of 166°F
Not gonna lie, I always sneak some cookie dough when I bake cookies and have never gotten sick. Either way I’m sure it’s best to err on the side of caution when cooking for other people 😀
True I've also never gotten sick from regular cookie dough!
I recently made a mixture of all of your rainbow cake that had 6 rainbow layers, rainbow buttercream filling, rainbow buttercream on the outside, a rainbow white chocolate ganache and toped ti off with a mini edible rainbow sculpture! What a brill way to cheer us up for back to school/work😂

The cookie cake looks amazing and I’m definitely going to give it a try. In your tutorial you said one of the ingredients for the cookie dough was buttermilk. However in the ingredients list below you have yoghurt. Is this an oversight? Grateful for clarification. Thanks as always Jemma I love your recipes.

Ya sure, bake for about 5 minutes in a 150C oven. It is a safer method as it demolishes any existing bacteria...

Hello Jemma. Im from Brazil and there is no buttermilk here. Usually I substitute for 240ml of milk with a tablespoon of vinager or lemon. Am I right? Thank you

Hey Jemma ! This cake looks super nice, i'd love to try it but i'm not that much into buttercream (i don't like the taste) - what could i swap it with ?
There are a zillion types of frosting, if you don't like the cloying sweetness of American buttercream, you could try Italian meringue, Swiss meringue, or my favorite is French buttercream. If you don't want buttercream at all you could do a whipped ganache. Another option is stabilized whipped cream or a mousse, but that would have to be eaten same day, it won't have the same stability
