As a filipino we use water instead of oil even in cooking sausages and other marinated/preserved meat with sugar (such as tocino and chorizo including bacon) because not only it reinforce the oil in the meat to be quickly squeezed out from the meat but also prevent it from quickly burning because of the sugar.... i really thought its a normal thing 😂

I do the same in a crockpot with a 3lb pkg of ends and pieces, mostly for the grease to use as a cooking fat. Add about a cup of water to the bacon and let it go for hours. When the bacon is done its in pretty small pieces for cooking with, add to beans, omelets, salads etc. Remove from the grease and store it. The cool part is the water kept the bacon from burning and now is still mingling in the grease. Move the melted bacon grease to a sloped sided bowl and let it cool at room temp then refrigerate it. The water in the grease will sink to the bottom and take any particles with it leaving you nice clean bacon fat for cooking with. Carefully remove it from the bowl and container it for storage. It can be stored in the fridge or freezer.
As usual, he is spot on!! Of course if you have a large quantity of bacon to cook, place bacon on a rack, in a pan!! Bake at 350°F, crispy bacon w/o it sitting in fat!!👍💙
My mom did this my entire childhood and I always was taught to do this from an early age, I remember cooking bacon for some friends once and two of them simultaneously lost their minds seeing me out the tidbit of water at first, but once they tasted the result they both switched as well. You're absolutely correct it's THE BEST way to cook bacon.
This method still works even for that kind of bacon. It help the browning to become more even, in fact. Just switch your flame off before it gets crispy.
I’ve been doing this since I learned how to cook. I can cook a whole package of bacon in a small pan by adding water since you can submerge every part of the bacon in water and make it render fat quicker.
I can confirm this works. If I'm going to just eat the bacon, I'll omit the water because I like it chewy. But for sandwiches or potato salad I will always use water for that crispy snap!
I work in a very small restaurant and I use a flat grill press. Zero oil (obvious reasons), place the bacon down and close the grill for a couple of minutes. It traps the steam, which helps to control the temperature below burning, and also stops the bacon from buckling to keep full surface contact with the heat source.

I massage the water around then and then seal using the machine's moist setting. Then when I'm ready to cook up some bacon, I just take one of the packs out and stove fry.. no extra water needed of course.

The even easier thing to do is to keep old bacon grease and put some in the pan before you start cooking. The oil does the same thing.
