Right! The meat is most expensive and he has plenty of it! This is more of a shortcut way because of the dough but certainly not poor! I know poor! We would have used a hot dog and rolled out white bread!!!
Here’s a substitute recipe that is actually “poor man’s Wellington” (1) 5 Lb pork loin ($7) (2) Mushrooms from garden,(free!) (3) Dough homemade - Water, Salt, Sugar, Flour. (Most of These are in your cabinets) Salt/pepper to taste (optional) The 3 things above would be considered cheap, not sure how it will compare or taste , but that’s the whole point of naming it (Poor man’s Wellington)

He uses bacon instead of prosciutto, and uses a pork tenderloin instead of beef. They’re both cheaper alternatives even if they’re not cheap.
