HOW TO MAKE BRAZILIAN COXINHA FROM SCRATCH | COXINHA CASEIRA | Brazilian Kitchen

  • Welcome to Brazilian Kitchen! Today, the most awaited for dish in this channel, the star of the dreams of all Brazilians that live abroad: Coxinha!
    To cook this amazing, wonderful, marvelous snack you're going to need:
    For the Broth:
    -1 Leek
    -3 Chicken legs
    -2 garlic cloves
    -1 onion
    -1 carrot
    For the filling:
    -Chicken that was used in the dough
    -1 onion
    -1 garlic clove
    -1 tomato or 1 cup of tomato sauce
    -parsley to taste
    For the Dough:
    -4 oz of butter
    -1/2 quart of chicken broth (or water)
    -1 1/2 cup of flour
    -egg, flour and panko (bread crumbs) for breading

    I used to live in Brazil until I was seven years old.,then we moved to England. I love Brazilian food. We used to have a cook in Rio who made Coxinhas. She used to stick a small chicken bone in the pointed end so that it looked like a chicken leg. I haven't eaten them since then. I have visited Brazil again twice but never had Coxinhas again. I am going to try making them.

    I have to try to make these myself! I was an exchange student in Brazil for a year when I was in high school and I lived off of these! Lol I think I probably ate one every day I was there. Awww now I miss Brazilian food…specially their barbecue 🥲

    I tried this recipe and the filling was fantastic but my dough was undercooked inside. Outside was nice and crunchy but the inside was almost raw. What did I do wrong?

      Hi! I'm glad the filling was good. I think that maybe the oil temperature was too high

    I really would like to try this ever since I fell in love with them in Portugal! But do you have an idea in how to replace the catupiry?
    Would be mixing some cream cheese with sliced cheese a good idea?

      You can just use the cream cheese by itself. I've had a few coxinhas back in Brazil that use cream cheese instead of catupiry and the result is good although less creamy.
      Let us know how it turned out with catupiry if you end up trying it (:

      If your local grocery store has it, you can sometimes get Whipped cream cheese which is very airy and mix it into the filling like he did with the catupiry. This keeps it creamy and easy to work with.

      Acredito que oficialmente seja "Ladle", mas acho que algumas pessoas adaptam. Certa vez uma estadunidense me disse que chamava de "scoop" ("scoop" seria na realidade o que se usa para fazer as bolas de sorvete).

      before or after cooking? if it was before you probably added a little bit to much flour. if it was after cooking probably too thick/ or not enough time to fry

      Assista novamente. Ele refoga cebola e alho, põe o frango desfiado, um pouquinho do caldo do frango, molho de tomate, acerta o sal e pimenta. Ah, e salsa ou coentro.

      Então você deve estar retirando a massa antes de está completamente cozida. Se esta muito pegajosa talvez falte um pouco de farinha de trigo.

    What are the exact measurements for the recipe?

      Hi Anastasia, the measurements are in the description. Except for the dough, the measurements don't have to be exact so if you have a larger or smaller onion than the one we used it won't make such a difference. Does that make sense?

      Hi Alex, I think the closest cheese to catupiry would be cream cheese. When it's warm it will be softer and close-ish in texture.

    My dough really sticks to my hands and comes apart when i try to mold the coxinha into shape...can someone tell me how to make it not stick?
