Yes! Thank you for saying you use the 4:6 method with the Kalita. I tell people this all the time and they think I’m crazy. Honestly, some of the best cups I’ve had are with the 4:6 method and Kalita!!

This brewer seems a little fussy to me, leveling and wave collapsing etc but then pour-overs are fussy in general. I also saw a James Hoffman video on how pouring from a higher level does NOT actually disturb the bed. There's actually more turbulence when you pour closer to the brewer. And that seems to be desired for better extraction and prevent the fines from clogging too.

08:00 Yes, I tried tasting the water, with and without rinsing the paper, and rinsing these papers is a waste of time and water. No difference rinsed or not rinsed. Certainly not enough to change the coffee. I find the Kalita to be the most forgiving with regard to the pour , the temperature, and the grind etc.
I like your Kalita wave kit. Where did you buy this?
I find it more convenient to wash a handful of filters and let them dry out in the sun, only takes a few hours and then they’re dry and they keep their shape
Do you think u can get your hands on Futurmat Ottima evo single group head heat exchanger machine??
Didn't talk much about grind size, why not?
Also, I noticed you didn't bloom the coffee. Is there a specific reason you didn't?
Where can I find the metal piece that you are using? Will it work with the metal Kalita 185?
