I've seen some clips of people playing and the game looks pretty fun, but is there much to do besides questing/fighting?

Those are the main two things in the game: fighting enemies and resolving quests. But it's not like you shoot every problem - - often if you have a high enough Persuade skill, Science skill, Engineering skill, etc., you can avoid conflict altogether.
