I love veal and chicken francaise! Have you done a video on how to make beurre blanc sauce? I don’t remember seeing it ... but I definitely want to try it!
It looked very thinly sliced, so something like 3 mins a side would be appropriate. If you've got a bigger piece than shown and you've gotten some good browning on the chicken, then you can finish it in the oven so your crust doesnt burn before your meat is cooked. Pro tip: definitely pound or slice your breasts into a flat cutlet like DJ did here, that will prevent uneven cooking

Render pork fatback. Saute chopped onion in the rendered pork fat. Add flour to make a roux. Add boiled potato chunks Clam juice and chopped clams. Finish with heavy cream. Adjust with water if too thick. Salt white pepper nutmeg.

@@CookingWithTheBlues Does this not have lemon in it anymore? All of the buerre blanc recipes call for white wine vinegar for the acid. I cooked your old recipe a couple times and it was fantastic.
a real rabbi would not eat cheese or dairy with chicken or beef... eggs yes, but cheese and dairy not allowed to be eaten with meat or chicken.. it can't even be cooked in the same pan. one pan for dairy and one for meat.

I know that food is delicious I am A baker/chef myself. But it gives me great pause when I see others who enjoy food as much ad we do who seem to struggle alot in the kitchen...Only speaking out of concern dont mean any offense at all.

haha, dude some of the best meat dishes are with heavy cream/cheese/sour cream (stroganoff, chicken Alfredo, etc etc)
