Pasta In Red And White Sauce - Easy To Make Italian Style Pasta With Indian Twist | Ruchi Bharani

  • Learn how to make pasta in red and white sauce.
    Pasta is undoubtedly a comfort food at its best. Chef Ruchi Bharani brings you an easy, hassle-free and extremely delicious pasta recipe that calls for a variety of flavorful ingredients that blend beautifully in red and white sauce and taste delicious.
    Ingredients:
    1 cup milk
    100g Penne Pasta
    2 tomatoes
    1 tbsp red chilli flakes
    1 tbsp garlic - chopped
    1 small onion, finely chopped
    1 capsicum - chopped
    1 zcchini - chopped
    1 1/2 tbsp tomato sauce
    few basil leaves
    2 tbsp cheese
    1/2 tsp dry oregano
    1 tbsp fresh celery
    Salt to taste
    Method:
    - In a pan, heat butter.
    - Add the plain flour to it and cook for a few seconds.
    - Once it changes the colour slightly, add the milk. Keep whisking and bring it to a boil. Cook it until it's thick.
    - Once the sauce is thick, get it off the flame.
    - In another pan, heat butter.
    - Once the butter melts, add the chopped onion and let it cook for a few seconds.
    - Add the garlic paste, chopped capsicum and zucchini and let them cook for a few seconds.
    - Add the tomato pulp to the above ingredients and let it cook for atleast 7 - 8 minutes.
    - Add the ketchup, fresh basil leaves, dried oregano and red chilli flakes and stir well.
    - Add some water and stir.
    - Add the white sauce to the above ingredients and mix well.
    - Add the cheese and salt and mix well.
    - Add the boiled penne pasta to the sauce and stir well.
    - The delicious pasta is ready to be served.

      Rajshri Food while whisking the milk for white sauce, it doesnt turn out to be that thick as yours. I whisked for quite long continously on high and high low flame, but didnt turn out to be that thick. Did u add cream to thicken it?

    So what if it's not totally Italian. Recipes evolve and different cultures will put their spin on it creating different variations. Some of them are usually really delicious. Don't harp on its authenticity as I'm sure she's well aware this isn't a purely Italian dish *smfh*

    Hehe had a lot of fun seeing all the Italian people getting so passionate over their cuisine getting violated by the use of ketchup. Well now you know how we feel when you make "tikka (most of you pronounce it teeka) masala" with "curry powder" (which is to a tailor made mix of spices, what ketchup is to fresh made tomato paste if not worse)... Or "biriyani" with a bunch of badly seasoned meat thrown in, and without ghee, or when you melt some butter and think you have made ghee. Lol. But no offense taken, none, food is worth fighting for. I'm a passionate cook myself, and an even more passionate eater. It delights me to see the same passion in others. Keep fighting! And boo ketchup. So much so that I don't even use it with french fries. Go ketchup hate!

      You aren't exactly eating tomatoes with milk in this recipe. You use milk to make a sauce and don't use the milk directly.

    The ketchup was added to sweeten the tinned tomato. Italians use sugar for this but would ever admit to it: of course sugar is unnecessary with ripe tomatoes in an Italian summer.

    over cook pasta, use olive oil instead butter for vegetables,put peperoncino in ,first with garlic olive oil and basil,very heavy sauce .why you combine ,,bechamel,,sauce (white sauce)with tomato sauce? ketchup in sauce,when you can do sauce with fresh tomatoes?THIS IS NOT ITALIAN PASTA dear lady.

    Most of the white sauce based pasta in the authentic Italian restaurants are either Alfredo sauce (cream + parmesan) or a simple wine cream sauce. This roux based white sauce is primarily French (the Bechamel sauce, a French name) and used mainly for casserole dishes, and not for pasta! Even the red-white combined sauce used primarily with raviolis or cannellonis is a tomato + cream based sauce! You should check out Gennaro Contaldo's channel for authentic pasta recipes. Consider it as constructive criticism, nothing negative :)

    My goodness this recipe is delicious. I am eating it right now. Thank you thank you. I added chicken to it. Added some Mrs.Dash seasoning garlic powder and basil to the chicken. I used chicken breasts and cut into cubes. It was great.
    By the way to all the dumb comments, this isn't supposed to be an Italian dish lmao. It's a great recipe if you want to give it a try.

      The only step I could see it being "difficult" is churning the tomatoes after you've boiled them. If you don't have the tools I'm sure you could buy it at the grocery store or used some other tomato base sauce. Other than that this is honestly a 30min meal with very little prep required.

      the ketchup is used because the local variety of Indian tomatoes are quite sour in taste unlike cherry tamtoes or their other varieties etc which have sweet flavour, so to balance out that tartness either you add sugar or ketchup( as Indian ketchup tends to be slight sweet) or both sugar and ketchup.

    Sorry but in italy we never use bechamel sauce in pasta recipes, except of oven cooked ones, like lasagne or cannelloni or similar. This is not an italian pasta recipe at all.

      The first time I wen to the US many years ago I was asked if I wanted "pasta alla Alfredo"...I said "Alfredo who?!" :-D
      They where probably tricked into buying pasta burro e formaggio as a delicacy by clever immigrants in the early 1930s and adopted it as "real Italian" :-D

      gobbi dimerda it's not meant to be authentic. Pasta in "red and white sauce" is an indian style of pasta preparation. I guess they should have mentioned that in the title or in the description :)

      generally u can mix olive oil with butter to get a true french taste..... but do not use olive oil in white sauce

      this isn't Italian. ketchup is for flavoring and is optional. there's no such term as just add in some ketchup means your no cook. italian term can burn in hell. everyone in the world cooks not only italians. noodles come from china and herbs spices comes from India. they cook them before italians do. so do mind shutting your thoughts of how great you think italians cooks are when they got ingredients and recipe ideas from other parts of the world. italian is not way of life is just luxury cooking with full of bullshit methods created to seem harder when actually you can get tastier and healthier cuisines in other parts of the world. go to hell
