Star anise is not a traditional Indian spice and apart from chefs who had some experience in authentic chinese cooking, I doubt many others knew about it 10 years back. I love that Gordon actually takes risks like this. He doesn’t just rest on his laurels he’s actually willing to fail and learn in front of the world.
Failure is the best teacher.
This man just cooked a main course for a packed restaurant, by himself, in a foreign kitchen with minimal equipment and no oven, where nobody spoke English, in an Indian style that he is barely familiar with.

He did go off and do his homework before which is the mark that separates cooks and chefs.
He is familiar with our style of cooking
All British chefs are quite very familiar with Indian cuisine.
Asian Import Indian food is extremely popular in the U.K. he has probably made a lot of Indian dishes before.
He didn't cook for the packed restaurant. He just cooked for those so called Delhi's Finest.

I miss going to india in december. I live in Canada but my family and I would go to India for a month when I was younger. It's been 4 years since I've last gone to visit my relatives that live up there. I do love Gordon's attempts to prepare and cook our complex cuisine but still doing research and learning more than just the basics as well to broaden his own understanding

The thing is that in some parts around the world there's not much you can do about it. Sure you could keep everything hospital clean, but then you probably would run out of money quite soon and there would be no restaurants at all. Of course you should expect some level of hygiene, but also accept the reality.
