  • Gordon is India this week on Scrambled while he was shooting Gordon Ramsay: Uncharted. After being inspired by the amazing spices of the Kerala region of India, he's decided to whip up a spicy Scrambled Egg Roti. But this is not a breakfast taco, this all Indian and one of Gordon's best breakfasts yet!

You don’t need to play the sitar and tabalas as bg music every time you shoot in India. 🤦‍♂️
EDIT: To everyone not reading this correctly. I mean to say ONLY sitar and tablas. Indian culture is far richer than you think if you think that it can only be defined by a few instruments. Nadaswaram, mridangam, ghatam, Thambura to say the least for South Indian instruments. Theres many more. Get some knowledge people.

In almost every Indian household, there will be at least one pan without handle. I don't know about all regions of India, but it's common in Kerala, where I belong to. In my house, we have 2 or 3. It seems like this place didn't have a pan with broken handle so that's why it broke, with the excuse of being "handled" by a world-class chef 😂

I'm really glad I stumbled upon this video of yours Gordon. You've brought back fond memories when my late father would cook scrambled eggs for me when I was younger and he did it exactly the way you did in this video. Reminiscing the good old days. Every single ingredient (obviously minus the unknown black powder which I'm not sure of) and the method was perfect. I can happily say that I've tasted your scrambled eggs dish made in this video all thanks to my late father. Thank you from the bottom of my heart, you've brought back memories for me. I do love the end result. But I have notes for this recipe.
    1. The ghee needs to be less. That amount of ghee is used for an entire kilo of chicken.
    2. Onions need to be done some more before the salt is added.
    3. Tomatoes first, then the spices.
    4. The chilli seems non-spicy, so it's okay. But when putting chilli in, make sure to cut in bigger chunks so it's easy to pick out. A lot of people prefer to not eat the chilli.
    5. The turmeric powder and black masala has been put in a good amount. But this dish could use more red chili powder. Also, add a bay leaf if you are using black masala.
    6. Crack the eggs separately. It's just a safety measure.
    7. That thing you are serving it on looks like a half-cooked bhakri and not a roti. Don't serve eggs on it. Make it separate or else the bhakri becomes soggy and gross.
    8. Onions go on the side along with lemon and salt. As for toppings, always ALWAYS coriander leaves.
This does seem like a good attempt and I'm glad that you tried it. I would say that this comes in the bhurji category though, not the scrambles eggs category. In India, the terms mean two completely different things. Bhurji is the one you make with all these spices and serve with Indian bread (roti/chapati/bhakri/dosa). Scrambled eggs are made with salt, pepper, slightly more whipped eggs (twice the amount), butter and milk. Again, both are topped with coriander leaves. Obviously, everyone has their own style. But this is the more common one.
