Everytime I switch the printer back in I have to rerun the configure printer settings area to get the label printing correctly again (I change the settings from default). Is there a way to make the printer not resort to default label settings each time?

You should try the Zebra help desk. Once the settings are configured in the ZSU, they should remain set. The label data can contain code that can change the configuration, but maybe there is something else doing it as well.

My problem with my ZQ520 is that my media settings don’t save my 3:2. It keeps going back to 4:2 when I turn it back on

If you are referring to the label size, maybe set it to defaults and then run a calibration.
Defaults:
