The term for ”butterflying” the chicken is ”spatchcocking”. Keep the backbone and giblets (if the bird comes with them) and boil them in a cup or two of water for about 45 minutes. Then save ALL the bones after the meal and boil them in the stock from the giblets and backbone, covered with extra water, for about 45 minutes. Scrape the drippings from the roasting pan with some water or stock, and make gravy. The bone stock can be a foundation for soup or a stew, or cook rice in it. This way, you never throw out unused nutrition. You paid for it, you use it.
Yup its called spatchcock chicken. I always probe the breast and take out of the oven at about 140f. It carry over cooks to roughly 165 and stays juicy
Wow, so simple, but so rewarding. I like this, as it's pretty healthy, but no crazy amounts of fats. You've got the gravy (I'd also add some potatoes/carrots too cook alongside in the juices). Sourdough Baggette and maybe a nice wine, and it's a winner.
THAT CHICKEN LOOKS GREAT. I GOT A WHOLE CHICKEN. WILL TRY THAT. IT'S NOT GOING TO BE GREAT IS YOUR'S. I WILL BE TRYING MY BEST. THANK YOU FOR PUTTING A WHOLE DIFFERENT TWIST ON CHICKEN.
Made this with mash potatoes to soak up some of that gravy. It was so delicious!!! Thank you so much for the recipe. You're the best. Your recipes always turn out amazing.
I just took my chicken from the freezer to thaw in the fridge so I am going to be cooking it for tomorrow's dinner... OMGoodness I can't wait!!!!! What do you usually serve as side items with this chicken... Any suggestions???? Love yr vidz girl!!!!
That looks and sounds delicious! Nice work and great eats. I’ve never baked a (mostly) whole chicken before and am gonna give this recipe a GO! Thank you for sharing. How much of each seasoning should I use?
How much time roughly may this take to roast 2 Kg whole chicken completely?. Temperature 350 F or Centigrade?, Roasted chicken appearance may be of Video like.

High calorie chicken that's all about seasoning! I want my chicken the way my grandmother baked it- natural juices & just the chickens flavor. Overkill & lots of calories especially with hidden butter. Not necessary

What seasonings did she use

Then don’t cook it.. stick to your grandmas recipe.
I grew up in the old days we did similar, we just ring the neck, puck and spit the back with a knife, rice, beans and cook. Old school cooking.

What seasoning 😂is used
Not eating anything with that long hair hanging in it! Don’t need to hear her chewing either.

Waste NOTHING
Way too much seasoning. I like my chicken to taste chicken
How the butter comes into place? It's in your ingredients
