Saying the wood is known for its weight and density is basically saying the same thing twice. Probably meant hardness and density.

I'd try a milling machine with a rotary table if you can. Use a radius bit, and you probably want to run it fast

Why would you not recommend it? Post mounted grinders are common things with metalworking lathes Like I get that it seems sketchy, but it's really not if the tooling is secured properly, it's nbd to me and seems reasonable believe it or not

11:50 there are differenti tipes of water stone, some harder like shapton some softer. On my 1000 grit shapton I sharpen a 3 mm chisel no problem sharpening freehand. This because I had a terribile experience with honing guides I don't like them they're top fidelly and without them I take 45 sec when honing
