I like to add smoked sausage to what I call beans n’ greens. Pretty much beans and hearty greens like collards, kale, or whatever hearty green you like cooked together. That alone is satisfying but adding the sausage brings it up a level.

Original alfredo is without Cream. Just a butter, pasta water and cheese emulsion.

All the produce in this video reminds me how much I save growing most of my own produce!😱It’s also a good thing I’ve learned how to process and preserve that produce in case I grow more than I can eat at one time. Score! Granted it’s taken me a while to figure out how to grow enough for my family’s needs but that’s ok. After a few years of learning under my belt I feel much more confident in my ability to provide for my family in this way. I’ve been getting better at growing staples as well like beans and potatoes and sweet potatoes though those are still a work in progress lol. 🤷🏻‍♀️It’s also a huge stress reliever for me to go outside and spend time in the garden. It’s so exciting to see the garden produce fruit/vegetables for us. It never gets old. Truly. So satisfying!

What spices or seasonings can we replace with ole bay

I have been adding protein powder to my greek yogurt to flavor it (usually chocolate and then a little scoop of nutella) and boost the protein which kind of helps to keep us fuller for longer!

@seemindymom Regarding the ranch crackers, we don’t use seed or canola oils, so what would you recommend replacing it with in that recipe?

It's crazy to me that some states charge food tax I guess I'm lucky bc I do not have food tax but your videos are my go to when I'm not sure what to make you have great ideas

I wouldnt mind you doing a "challenging items Ive refused to use" use it up challenge. I have weird ingrediants sticking around my pantty/freezer and need ideas. Like a weird can of veggie franks.

Hi Mindy, thank you for including healthy produce and showing that it's affordable to include greens on a budget. I can see this style of healthy eating for one person being cheaper per day over multiple days, with leftovers and larger packs of eggs being good value, etc.

More videos like this please! I am fortunate to not have to live this extreme but I think these types of videos would be so useful when we go on vacation!

Been following you for a couple months now. Hello from Utah. You have so many great ideas. I've been working lots of overtime lately so dinner has been up to my husband. But that is coming to a close so I've been sitting here making a plan for the week, and really enjoy your videos. I do a similar thing to your chicken wraps, but i use grilled chicken. That's a big favorite here. We also really like tacos, year round but especially during the summer.

The other good thing about the easy peelers over the applesauce is no plastic waste and you can put the peelings in your food waste bin/compost.

I am in shock with the produce prices. Here in PR, when we find fruits deals these are some of the prices: Strawberries 3.99 16oz Black/Blue/Raspberries 2.98 the small pack Fruits and vegetables are so expensive here, well food here is 😅

If you actually spent $8.72 for a days worth of meals for one person that would be a total of $61.04 / week. Which is alot.

I would never buy it in a jar. No comparison and so easy. This sauce is just as versatile as any marinara or pesto. It's 💣 in a white lasagna w/ Italian sausage & spinach. Carbonara method is great too for any pasta accompanied. There's just no other way than homemade on this sauce.

the recipe I use for Greek Dressing ¼ cup red wine vinegar 2 cloves garlic, minced 1.5 teaspoons each oregano and kosher salt 1 teaspoon or more Dijon ½ teaspoon each freshly ground black pepper and honey ½ cup EVOO Shake to combine all together. If using cruet, add vinegar to V line, then all remaining ingredients except oil, then add oil to O line. Shake to combine.

Just be aware if the current cucumber recall spanning many states. Salmonella.

This made me feel good about my family's grocery budget for a family of 7, the youngest being 15, we spend decently lower than that per person per day, and we eat really healthy. Here I thought I was overspending.

I love a new Mindy video! I totally get why she cut back for the summer, but I definitely miss the new ones. I’m a bit newer to watching her content, so I went back and started to watch all of her other videos. I love them all, but especially the pantry use it up ones. It’s something I feel like I’m always doing. I’m also really loving the ones like this one where she pulls an old video and sees how compatible it is today. I’d really like if she would do a video on how much of each items she keeps in the house. I struggle with keeping too much of certain items. It’s probably from the shortages from Covid and I’d like to know how she finds the right balance.

As a kid I ate everything except licorice and banana smoothies. I hated everything even remotely licorice-y. I liked bananas but cannot stand banana flavoured drinks. This is coming from a kid who ate paper, bugs, literal mould, dirt, habenero chillies and other questionable things.
