Jolee’s Kitchen, a career woman/mother’s vlog sharing my joy of cooking and baking through tested recipes; my thoughts and bits of my life after 60. I grew up in a family who is very interested in food. I dabbled in the kitchen since six years old, observed and learned from family members and relatives who specialized in different Chinese cooking like Hakka, Hokkien, Cantonese, Teow Chew and Straits Chinese Nyonya. A foodies and love to travel, I developed interest in other cuisine too. We shall cook better and live better. Let’s cook together!

Here in Malaysia, the durian is revered not just as king of fruit, but as symbol of the balance between man and nature, a delicate dance that has been perfected over generations. Nestled in the lush tropical landscape, the durian orchard stands as a sanctuary of both nature and flavor. The durian trees spread their broad, dark green leaves, providing a cool, shaded canopy that shields the ground below from the intense tropical sun. The air is thick with the earthy scent of rich soil and the distinctive, potent aroma of ripening durians, a smell that aficionados find intoxicating and others find overwhelming.
The journey from flower to fruit in a durian orchard is a fascinating and intricate process, marked by several key stages that span several months.
FLOWERING
**1. Bud Formation:**
- It all begins with the formation of flower buds on the branches of the durian tree. This typically occurs at the onset of the dry season. Buds are small, green, and clustered tightly together.
**2. Flowering:**
- As the dry season progresses, the buds swell and eventually burst open, revealing clusters of small, cream-colored or pale yellow flowers. This usually happens in the late afternoon, and by nightfall, the flowers are fully open, releasing a sweet fragrance that attracts pollinators.
**3. Pollination:**
- Pollination is primarily done by bats, bees, and moths that are drawn to the flowers' nectar. These creatures transfer pollen from the male parts of one flower to the female parts of another, facilitating fertilization.
FRUIT DEVELOPMENT
**4. Fruit Set:**

- As the durians mature, their green husks start to harden, and the spikes become more pronounced. Inside, the flesh transforms from a firm texture to a rich, creamy consistency, and the aroma intensifies.
HARVESTING
**7. Harvest:**
- Once the fruit is ripen, it will fall on to the ground. As the heavy fruits can easily be damaged if they fall to the ground. Netting would be set up below the tree to catch the fruit. During the harvest season, the orchard comes alive with activity, as workers carefully collect the heavy fruits, their thorny husks hiding the creamy, custard-like flesh within.
Overall Cycle
The entire cycle from flower to fruit can take around 4-6 months, but this can vary based on factors such as climate, soil conditions, and tree health. These are tubers that have a similar, but crunchier texture compared to a potato.
The tubers have traditionally been extensively used by Native Americans too.
