  • This traditional Hakka braised arrowheads with pork belly is an essential New Year dish for Hakka people. I'm sharing my grandmother's recipe. Its preparation can be described as both simple and troublesome. Simple because it only requires a few ingredients. Troublesome because even just cleaning it can be quite a task. Arrowheads are not easy to find, and the China leeks are only available during the New Year. Fortunately, they both can be kept well, just wrap them in newspaper and store them in the refrigerator, they can last for a month without any issues. This is a dish that gets better with time. the flavors become even more fragrant overnight. The secret lies in the pork belly fat. The tender pork belly, vibrant leeks, and rich flavor of the dish are complemented by the arrowheads, which absorb all the flavours, making it both aromatic and sweet. My family have it by wrapping the pork and arrowheads in lettuce leaves and dipping it in hoisin sauce before enjoying.
    這道五花肉焖小芽菇,是客家人不可缺少的年菜。我分享的是我嫲嫲的食谱。它的做法,可說是既簡單又麻煩,說它簡單,因為佐料只有几样。說它麻煩,因為單是清洗就大費周章。小芽菇不容易買到,蒜要用新年才有的唐山蒜。不過好在它们都很耐放,用報紙包著放進冰箱,存放一個月沒有問題。这是一道耐吃的年菜, 隔夜在炒,蒜越腻越香。秘诀就是肥肥的五花肉。五花肉软糯, 蒜苗翠绿,味道浓郁,小芽菇吸足了肉味真是又香又甜。我家的吃法是用生菜包裹猪肉和小芽菇,蘸錦酱一起吃。

    Tips 1: Do not add salt, because the fermented bean curd is salty enough. If you want to add salt, please taste first before you add.

    Tips 3: Use low heat to pan fry pork belly until oil is oozes out, then add hot water to braise, this way the meat will be QQ, yet soft and tender 五花肉软糯且Q的技巧是小火煎香至出油,加开水小火慢煮。

      Hi Annie, arrowheads is sometimes known as broadleaf arrowhead, duck-potato, Indian potato, or wapato.

      These are tubers that have a similar, but crunchier texture compared to a potato.
