这个视频就是瞎扯,做法没什么依据:
1. 开头说泡水加盐,什么消毒杀菌,我去,这排骨都要炒、炖半小时以上了,还要靠盐杀菌消毒,顺着嘴胡诌。
2. 泡血水和焯水这两步只要二选一即可,一般冷水下锅焯水再煮开一会儿洗干净捞出就可以了。没必要两步这么麻烦。
3. 焯水后,为什么要放入冷水?冷水只会让肉质变硬。瞎搞。
4. 最后出锅前,锅里肉眼可见只剩油没什么汤水了,这时候加生抽,会很快干掉,导致发苦,外行。
5. 说自己做法特点是“肉质软烂”,全篇没有看出用什么技巧软烂了,没加山楂,没放醋,也没上高压锅,泡冷水了,最后还把汁收的那么干,看不出怎么会软烂。
