Super Easy Kimchi Fried Rice | Kimchi Fried Rice | Get Cookin'
Kimchi fried rice is a popular Korean dish made by stir-frying cooked rice with kimchi and other ingredients. It's a delicious and easy-to-make dish that's perfect for using up leftover rice and adding flavor-packed kimchi. Here's a basic recipe:

Ingredients:
2 cups cooked rice (preferably day-old)
1 cup chopped kimchi
1 tablespoon kimchi juice (from the jar)
1 tablespoon Gochujang paste
1 tablespoon vegetable oil
1 onion, finely chopped
1/2 cup diced cooked chicken, pork, or tofu (optional)
1-2 tablespoons soy sauce
1 tablespoon sesame oil
1 green onion, thinly sliced (for garnish)
Sesame seeds (for garnish)
Fried eggs (optional, for serving)
Instructions:
Heat vegetable oil in a large skillet or wok over medium-high heat.
Add chopped onion to the skillet, and sauté until fragrant and onions are translucent.
Stir in the diced meat or tofu (if using) and cook until heated through.
Add chopped kimchi and kimchi juice to the skillet, and stir-fry for 2-3 minutes until the kimchi is heated through.
Add the cooked rice to the skillet, breaking up any clumps, and stir-fry with the other ingredients until everything is well combined and heated through.
Drizzle soy sauce and sesame oil over the fried rice, and stir to evenly distribute the seasonings.
Taste and adjust seasoning if needed, adding more soy sauce or sesame oil according to your preference.
Garnish the kimchi fried rice with sliced green onions and sesame seeds.
Serve hot, optionally topped with a fried egg on each serving.

Good recipe. I personally prefer cutting the chicken in thinner strips, and using dark soy sauce over light as it gives it a nice sweet taste without having to use too much pineapple or sugar in the syrup

Yes you can omit the saffron, it is not expensive when you get it from the Asian stores
You can use saf flower for alternative you can buy it in the market,or instead use a pinch of turmeric powder for color.i don't know what do you call saf flower in the Philippines but I know they are selling it in wet market.too bad I no longer live there.
