INGREDIENTS:
Pomegranates - 2 kg
Sugar - 1/2 cup
Lemon juice - 2 Tbsp
Dry ginger and cardamom powder - 1 Tbsp
METHOD:
- Cut open the pomegranate and deseed the pearls.
- Rinse them once in water and drain the water completely.
- Select only the good quality pearls and discard any decayed pearls.
- Grind them to a juice without adding water.
- Filter the juice through a Muslin cloth (cheesecloth) and completely squeeze out the juice and set aside.
- In a kadai, add sugar, pomegranate juice and lemon juice.
- Reduce the juice until it reaches the consistency of a thick syrup.
- When thick and large bubbles appear, it is time to turn the stove off. The consistency should be such that the syrup is thick enough to coat the spoon.
- Transfer immediately to a clean glass jar and store it in an airtight bottle in a refrigerator.
- This molasses can be used while making Shrikand, salad dressings, juices and ice-creams.
- For making Pomegranate Panagam, add a few tablespoons of the molasses and dilute it with water. Add dry ginger and cardamom for flavour.
